    Celyn...how awful for you, but the advice to not let it stop you doing anything is good...not easy to do but good advice all the same...hugs.

    PenPen...how organised you are, I feel as if I am doing nothing except keeping the house 'turning over' and knitting baby clothes.

    Very cold and windy here to-day, bright enough so hopefully no snow...Ireland shuts down after the second millimetre!

    Did first shop of February this morning, and OH treated us both to a nice lunch in an hotel we used to eat in quite often, quality still good, just nice home cooked food so I don't have to cook to-day.

    Afternoon all; I've just finished a batch of work and also sorted out the wages for DH's sub-contractors - plus I did my food shopping this morning - so I'm treating myself to a mooch on here. I'm very proud of myself because I was determined to get all the major tasks done and I did.

    CELYN - how awful for you. I'm sending you (((hugs))).

    Welcome to DANKSSHADY and MKWOTSIT - I'll look at the geocache site later and thanks so much for posting it. It sounds like just our kind of thing.

    REDRUBY - thanks for saying you like my rambling posts! I kinda get carried away when I'm typing!

    Whilst I'm here, I had to find out some information earlier and came across this site http://copycat.cdkitchen.com/. It's great - it has copycat recipes for all the major restaurants so, if you love a certain dish at a certain place, they will have the recipe for it. I'm going to use it a lot, I think, and it will give me more ideas for meals, as well,

    Well, we've had no snow; it was lovely and bright this morning, then it tried to rain about an hour ago so I had to get the washing in, and now it's bright and sunny again. It's absolutely freezing though.

    Anyway, off to hunt out the recipes for SHEZ and to investigate MK WOTSIT's geocaching site.

    SHEZ - here are the recipes. The almond slice one doesn't give cooking instructions so I just guessed and put it in the oven - about 375/190/Gas - until it looked right.

    Impossible Pie - I found the recipe by Aussie Lass but this one was on another post, I couldn't find Aussie's (sorry Aussie!); it's the same recipe, though. It's really delicious and unusual - I like a spoonful of jam in mine!
    ALMOND SLICES

    1oz plain flour
    1/2 level tsp baking powder
    2oz ground almonds
    2oz caster sugar
    1 egg
    a few drops of almond essence.


    IMPOSSIBLE PIE

    While baking, the ingredients will do the seemingly impossible and change from a sloppy mess and will separate into 3 layers - a crisp base, a creamy custard centre and a chewy coconut topping.


    ½ tsp vanilla extract
    4 eggs
    ¾ pt milk
    2 oz soft butter
    3 oz plain flour
    4 oz desiccated coconut
    6oz caster sugar
    ½ tsp baking powder
    ¼ tsp salt


    Preheat oven to 180 degrees

    Grease a 9 inch round baking tin.

    Place all ingredients in a large mixing bowl and beat or whisk all ingredients until everything is really well combined.

    Pour into tin.

    Bake in oven for 50 minutes or until the top is puffed up and a crunchy golden brown.


    Allow to cool for at least 10 minutes before eating (during this time the pie will deflate slightly).

    Serve warm or cold.

    Enjoy!

    A very cold windy day here which really wound up my class. They were fascinated by the enormous hailstones and we collected lots of them so that they could see them melt in their little hands, funnily enough they've been learning about ice with the student teacher this week.
    We're having a chippy tea tonight and planning to hibernate in front of the tv and fire!
    Tomorrow night I'm off out to my friend's 40th birthday party. DH is staying at home babysitting as my parents who usually do it are in Oz. I guess I'm going to see some old faces from my schooldays so that'll be funny and scary too! :rotfl:

    Mioliere thanks for posting the pie and almond slice recipes, i`ve copied and pasted them into word and i will be trying them sometime in the near future.

    I love being in the kitchen and it`s usually only savoury things that i make so i need a lot of practice for the sweet things.

    I was looking on the kitchen thread earlier and some people have marvellous kitchens but i hate mine, i loved my big old kitchen in our last house and i thought i would be able to manage with the one in this house but i don`t like it at all. Never mind - it functions and thats what really matters, i look forward to the day when we can get it all taken out, rewired plastered and a lovely new one fitted it will be a few years off yet though.
    An awful lot of my kitchen stuff is still packed away in boxes as there`s nowhere for it to go but it`s surprising how much of it i don`t need now.
    Right i`m off to see if the bread rolls are rising - i`ll like my kitchen much better if the things i make in it turn out well :D

    Hi all,
    Well what a day, been lovely all day with blue sky and sunshine, till about 4.15pm then it went very dark and windy and blew some sleet and hail across us.I have bought some nice Braising Steak from LIDL and popped it with some nice veg and a pint of red wine in slow cooker - mmmm might have mash or rice with it.Sue will be pleased its all done when she gets in later, hope its better day tommorrow.Saw good deal on Satnav with Halfords but I got one lol, so gonna be good! DD been on training course today she come in froze! DS just done last day of his temp job and now looking 4ward to start in Liverpool on Monday as an F A Coach so pleased for him.Next week be a bit quiet here Im thinking! Anyone had any snow today, I hate the stuff! Been a better positive day today and hope u all have a great weekend.!!!

    Oh dear...........winds getting up...........don't know whether its sleet or snow out there but the lights keep going and OH is moaning...........we're all electric apart from gas ch..............what can we cook over a few candles.............????? ..................lol
    Have to send one of the kids to the chippy if we get cut off. Times like this we suddenly realise we have no batteries for the radio, no primus stove (be a godsend in emergency) ........all we've got are candles.........:confused:
