On Christmas morning for Brunch we do homemade scotch pancakes, croissants (If I have no time to make my own I have been known to buy those ones in a tin you bake yourself)`- I put nutella or strawberry jam or cheese in them before baking, and we have sausages too. We are veggie though, so its veggie sausagemix from Asda which is 79p, lots of OJ and coffee/hot chocolate for the boys. If you have a costco card their bakery stuff is great & easier than baking it all yourself. I am planning to get croissants from there for Christmas day brekkie.Trust me - I'm NOT a doctor!0

Prepare extra veg Xmas day and cook, then you can have a bubble and squeak base with bacon, fried egg and beans? You could even prepare the bubble day before and make into patties all ready to go.
Failing that, what about waffles and syrup? Kedgeree (sp) is a usual brunch dish when staying away.
Could also offer bagels, cream cheese and smoked salmon. Bagels are usually BOGOF and the cream cheese and some of the value salmon off cuts are pretty cheap.
Frittata (sp)
Cold meat/ham selection/boiled eggs.
Basic scrambled egg on toast. Omelette's?
Boxing day breakfast is usually cooked here or bacon butties.

spray oil
175g mushrooms sliced
175g plain flour
2tsp baking poweder
pinch salt
50g melted butter
125ml semi-skimmed milk
1 large egg
1tbsp fresh sage leaves chopped
3 tbsps grated parmesan cheese (NOT V MSE! I use chedder!)
pre-heat ioven 200 c / gas 6
saute mushrooms using spary oil. 5 mins untill soft. leave to cool.
sift flour. BP and salt into large bowl. add butter, milk, egg, mushrooms sage and 2 tbsp of cheese.
lightly mix together then divide into your muffin caess and sprinkle over remaining cheese.
bake for about 25 mins

Hi Lois and CK,
I second the idea of kedgeree as it's cheap, healthy and delicious. It's lovely served with a selection of home made breads. Or smoked salmon off-cuts can be inexpensive served with scrambled eggs and melba toast. Possibly offer the option of chopped fruit (goes further this way) with a big bowl of yoghurt.

If it needs to keep people going until supper time then something hot and filling. What about a pile of jackets and then help themselves to fillings like baked beans/cheese/coleslaw/prawns or whatever. Or, I went to a party recently where they'd used slow cookers to keep chilli/curry hot and that could be served with baked potatoes (less faffing about than rice).0

Thanks to another MSE'er I googled Strata recipe & that's what we're having. Basically its a savoury bread & butter pudding made up the night before then just bunged in the oven when you get up. It's another good way of using leftovers as well. HTH.Sometimes not moving backwards is as much an achievement as moving forwards is on other times. (originally posted by kidcat)
