Chicken soup - how do I make it (merged threads)

I make my chicken soup with rice. I boil the carcass/ chicken pieces if it's whoopsies, for around 2 hours taking off any scum that forms. Add about a cup of rinsed rice (long grain) cut up about 2 decent sized carrots, 2 decent sized leeks (diced or sliced to your own taste). bungdit din and simmer it away for about an hour and 1/2. I do use a couple of stock cubes too espec if the soup gets too thick. The outcome will depend on the size of pot you use ect. Gorgeous when it comes out right. Always plenty of chicken falls off the bones. I just fish out the bits that nobody wants to eat.:T:jDabbler in all things moneysaving.Master of none:o

I'm going to have the following as left overs tonight - 3 Chicken legs, potatoes, carrots, onion, parsnip - and i'd think a chicken soup would be a good way to utilize these ingredients - does anyone know of a good one?
My only thought so far has been Chicken stock, then lob a mixture of them all in together, which could work...or might not!! So I'd prefer to follow a recipe that will work! :cool:

Sounds fine. To add more flavour, you might want to cook the veg first (not potatoes) in a little oil and add some herbs, add the chicken to get some colour on them (skin removed) and then top with stock and add potatoes. Cook until potatoes are cooked through. Shred the chicken from the bones if serving for more than three (although if you cook it long enough it will no doubt come off the bones).

Thank you for the idea - that was how I did it - came out Ok in the end - lacked a little depth, but it could have tasted a lot worse. I finished up with 2 bowls worth, i'll freeze the other for a rainy day!0

This has probably been posted already, but chicken carcases and scraps from a sunday roast will make the most tasty soup you will ever drink. Heres my recipe:
- Get all of your sunday roast leftovers and throw them into a big pot - 2 litres at least. The chicken carcas is the most important ingredient.
- If there is any leftover gravy, use this as well.
- Add 5 tablespoons of soup mix available from any health store or supermarket. This contains things like split peas and dried barley etc...
- If you have any leftover potatoes, throw them in as well (yes i know they'll go mushy but it gives the soup a wonderfully thick texture).
- Boil this mix for at least 2 hours, in that time it will reduce greatly.
- If needed, add more water.
- Any other ingredients like veg, carrots, broccoli can be thrown in too when you are almost ready to drink it.
- If you like creamy soup, add 1/2 a mug full of milk (optional) whilst boiling.
