For me with soup, any veg goes in that's left over. Just chuck it all in. And you will have an interesting soup that will taste different every time
Me too. Even left over pasta or baked beans have gone in in the past. Manky tomatoes, bendy celery, the last of the frozen peas, rice, lentils. Makes for a surprise soup and never the same twice.
There are many variations on how to make chicken soup so as your thread has dropped down the board I've added it to one of our main chicken soup threads so you can see how others do it.
