I buy a 250g packet of bacon bits from Sainsbury's for this recipe. It would be ideal for your offcuts.
Lentil Soup
6oz red lentils
2 pints water
1 clove garlic
8oz bacon bits
1 lb potatoes , peeled and diced small
Rinse the lentils. Place in a large pan with the water and bring to the boil.
Add garlic and bacon and simmer ror 1 hour
Add potatoes and cook for a further 15 mins or until soft
You may need to add some extra water especially if you let it cool and then reheat.0 -

This is one of the most delicious dishes I know.
2hrs cooking, serves 4-6
Slice a medium potato per person into thin slices(about 2mm thick)
Slice one large onion(or 2 small ones!)
Chop up some bacon or ham - 1 rasher per person is what I ususally use,but it depends on how much you can spare.
Make a basic white sauce,add cheese if you want(I do).
Sauce - melt a tbsp butter,add a tbsp flour cook until sandy in texture(a roux).Gradually stir in about half a pint of milk.Stir until thickens.
In a deep,greased oven-proof dish layer the potatoes,onion and bacon,season with pepper(no salt because of the bacon)
When you have put half the ingredients in,pour on half the sauce.
Continue with the layers,ending with potato.
Pour on the rest of the sauce.
Bake in the oven at 200c covered for 1 hour.Then take of the lid and bake for a further hour at 180c.
It's easy to increase/decrease quantities for this dish.The long cooking is the secret.
I serve it with carrots and a green veg.0 -
On a semi related topic, Bacos are being super reduced to 9p a jar in Sainsburys with a lifespan until jan 07, apparently its in ALL sainsburys but i deffo stocked up in my branch! i love Bacos!0

I use a pack of bacon pieces to make a big pan of pasta sauce , tinned toms, jar of pasatta, onion, garlic, herbs cook the whole lot up in a big pan and serve with pasat shapes.

I fry 4oz of bacon bits with half an onion and a few mushrooms. Mix in with cooked chicken flavour noodles (8p a pack at Asda) Makes a funny kind of chow mein, very tasty.Sealed pot challenge 5430

A lovley bacon suet pudding!! With mushrooms and onions - similar to steak and kidney but you can just mix up the suet mix with the ingredients and its gorgeous!!0

Bacon and cheese potatoe skins,
Just scoop out the potatoe - put the skins back in to crisp whilst I mix the potatoe with cheese and the fried bacon bits - we usually have this with chicken but they can be a starter or meal on their own.0 -
I put a bit of olive oil on the skins and place them upside down on a baking tray - leaving a bit of potato around the skins and just put in bacon and cheese - I use the scooped out potato for something else, but either way very nice!!!0
