    Bacon and Leek Roly Poly

    Make up a batch of suet pastry (8oz self raising flour, 4oz suet). Gently fry together chopped bacon, and sliced washed leeks, add 1tsp dried mixed herbs. Roll ot pastry into an oblong, spread with the bacon and leek mixture and roll up. Place on a baking tray in a hot oven for about 30 minutes. Serve slices with potatoes, vegetables and gravy.

    My mother used to fry them ubtil really crisp. Drain off most of the fat and then mix in beaten eggs and scramble with the bacon. We used to have this on a sandwich in the old days. It was yummy

    Warm Chicken and Bacon Salad (Serves 4)

    4 chicken breasts
    250g bacon (pref. smoked)
    large bag of mixed salad leaves
    cherry toms, as required
    honey and mustard salad dressing
    oil for shallow frying

    Chop chicken into small cubes. Fry until lightly browned. Put to one side, on kitchen paper to drain
    Chop bacon and fry until crispy. Add cooked chicken to re-heat.
    Serve on a bed of mixed salad leaves and drizzle with honey and mustard dressing.
    Add tomatoes if required.
    Serve with chunks of french bread.

    Really simple meal that is suprisingly filling!

    I bought a bag of bacon off cuts to use in a quiche, but i wondered if anyone had any other ideas i could use them for? the bits are quite small and i froze the rest of the bag so i'll have to defrost them all together to use them!!

    You could use them for topping pizzas or one of my favc meals is

    Bacon (you can use bacon bits)
    campbells cond tomato soup
    onions
    mushrooms
    macaroni

    Fry bacon bits, onions and mushrooms
    add tin of soup
    add to cooked macaroni
    Stir and eat

    you can put grated cheese on top and melt under the grill

    you can use the bacon bits in carbonarra or in ommlettes

    Rough mince or chop with equal amount of belly pork and make a pork pie .

    If you search BBc food there are some great recipes

    Rick Steins and Gary Rhodes recipes are particulary good .

  • Bacon and mushroom pilaff
    Fry bacon with onions in some oil, when cooked/browned add rice and coat with oil. Add stock. Bring to simmer and add crushed/chopped garlic(I usually use two cloves, depends on what you like) and then simmer until rice cooked.Add chopped mushrooms. I also add some mixed veg at this point (frozen carrots, peas and sweetcorn). Serve whilst hot.

  • I add them to lentil or pea soup if I have't any bacon stock. Also add them to bolonaise sauce. Carbonara sauce. Cook with mushrooms and have with pasta.

    I split the packet up into smaller quantities for freezing.

    I cook them then add to cheesy mash.
    Kids love it for tea with baked beans .
