I didn't think it was possible to change the date of the SO with First Direct. You can with HSBC but not with FD to my knowledge.
You can vary the amount though and one thing to note is that with both HSBC and FD you can catch up on missed deposits in future months.

Monmouthshire
Despite getting the account details directly upon opening the new account in the app, I got my first £500 sent back to me today. No email or messages notifying me why, neither is the new account showing in the app yet (though I was expecting to have to wait a couple of days)
Not sure why this is the case, will give it a few more days to see if it shows up before calling them, but surely they won't take my £500 deposit into my 'old' account as counting as the March deposit would they?

Probably because the account hadn't been fully set up before you made the payment - Monmouth have some manual processes they complete between account opening and the account becoming fully active. (e.g. manually adding the account to your online profile)

Seems not looking at my transaction history, maturity date is a week earlier that 1st deposit + 365 days.

Any update?
I had an issue 36 mature on Monday so I put in maturity instructions late Sunday with the inevitable result - initially I had the maturity proceeds arrive in the morning followed by the other £200 late afternoon. I didnt really expect anything else.
I am now gathering funds to pay for the April SOs so this account has matured at the right time.
Possibly if I'd asked instead to mature into a new regular saver 37 maybe possibly … but I am going to start Dudley in the meantime.
Some you win and some you loose - so far I've won 2 and lost 1 ,quite happy with that result. April has about 4 accounts maturing so we will try again.

I had a different experience. I opened my account on Monday morning and was able to send the £500 straightaway. It was showing on the Monmouthshire app today, no bouceback

I'm sure I recall issues when Monmouthshire introduced those app regular savers last summer where some people had problems, and others didn't.
I ended up with two!

Thanks - I've just tried to open the account again and it's gone through just fine. It's showing in the app after a logout/login and I've had a confirmation email instantly. The previous application must have just not done through properly I guess (either that or I'll end up with two!)
