Also, could I hypothetically buy 30 lots of £5 amazon gift cards to apply to my account to satisfy the 30 transactions in 60 days criteria?

Unless excluded in the offer T&Cs: yes you can. It might earn you a temporary block though if you repeatedly use the card for the same amount with the same retailer.

I may stagger this out over a few days and also buy some gift cards for some other retailers just to vary it.

11 days, they do say 7-10 working days.
