Why not simply drop a note in saying "My deeds indicate that I own the fence. Please could you show me the documents that lead you to believe otherwise."
Because it isn't correct - the deeds say nowt. And, it would have zero effect even if true - the neighb is not for listening.
    The statement is perfectly correct.

    Which statement?

    Ouch. Rude
I just went by the OP's information:
"They (the dysfunctional neighbours) say (claim) the deeds state they own the fence. Our houses are very old and there’s nothing about boundary responsibilities on either set of deeds, but the deeds do seem to show the houses are symmetrical, and the boundary is halfway between them, meaning we own the land the fence is on."

"I already have a copy of both sets of deeds. Their deeds mirror ours, and I expect every house along our street (all the same style and age). If anything, the deeds show that we own the land the fence is built upon. In the past, it looks like all the houses had walls build down from the midline, as some houses still have them. Our fence is obviously set to one side of where there was likely once a shared boundary wall."

which can reasonably be extrapolated to "indicate we own the fence".

To which they'll likely reply, "Show me".
And then you'll need to 'extrapolate'.
Given what Wistie has said about her attempts so far, how do you reckon that will go?

Well, as an update I've written my letter but not delivered it, with our without wine. I'm going to check it with my LP provider before I do anything else.

I very much appreciate everyone's contributions.

    Hee-hee, wine sometimes helps
Since you do have LP, then absolutely engage with them first, as - if this escalates (hopefully not) - they will want you to have taken the correct steps at all times.
Good luck, and please report back.
