You could add grated cheese to some of it.
You could also add curry powder to your mayonnaise before stirring through with a few sultanas thrown in0 -
You could arrange a dozen cherry tomatoes on top, if you want to add a bit of colour. Serve a separate bowl of cherry toms too, so that if people don't get one in their portion of coleslaw they can still have one!

I use half natural yoghurt/half mayo (hellmanns) to make it lighter - vary proportions to taste.
Always goes down well.
Use this in potato salad as well - but use warm potatoes and finely chopped onions - they absorb flavour better!

Hi,
Did anyone get the recipe for the New Orleans style coleslaw that Nigella made the other night on Nigella Express? I realise she's fallen out of favour on this board (personally I was always put off by the gesticulating with food etc) but hopefully someone caught the ingredients list.

She used.....1 head white or savoy cabbageHTH
2 carrots
2 sticks celery
4 spring onions
200g mayo
4 tbsp buttermilk
2 tbsp maple syrup
2 tsp cider vinegar
100g pecans finely chopped

I'd be inclined to sub yogurt for the buttermilk simply because it's always in the fridge unlike buttermilk. Bet it wouldn't make any difference.0

Does anyone have a traditional coleslaw recipe? My OH's mother makes a lovely one & I have asked her numerous times & she always says she will write it down & never does! I was hoping to be able to prove that I can do one just as nice!!!
Also another mother in law question - they gave us some parsnips which we have prepared & frozen. How long should we cook them for - again she just said "oh just put them in the oven" I am assuming it should just be alongside the roast potatoes & for same length of time???

I get lots of compliments on my coleslaw but know nothing about parsnips sorry.
My coleslaw:
Sliced cabbage
Grated carrots
Grated apple - I sqeeze the grated apple to get rid of some of the juice otherwise it can make the coleslaw a bit soggy/watery.
Diced onion - not too much or it takes over the flavour

I think the key to a good coleslaw is the mayonnaise.
At work, we just blitz chopped carrots and then chopped white cabbage in a food processor and then mix in a large tub with the mayonnaise.
As we make enough for 4-5 days, we don't add onions, as they sometimes seem to give off juice that can leave a bitter taste.
But, the mayonnaise we use tastes really lovely on its own. It's made by Gyma and we buy it in 10L tubs.Official DFW Nerd Club - Member no: 203.0 -
ok, I know it seems pretty obvious, but how exactly do i make it??? normally mr tesco does it for me, but recently moved away from uk and food is soooooo expensive. Masterchef I am not so thought I would ease into it gently lol!!Any help would be hugely appreciated x0
