Recipes for Home Made Coleslaw?
Comments

My grandma used to swear by a pinch of sugar into home-made coleslaw to take the bitterness off the cabbage and onion.0

Try this. It looks simple enough, but I haven't tested it yet, and I don't know how much it makes.
COLESLAW
INGREDIENTS
2 carrots
¼ of a white cabbage
2 tablespoons of mayonnaise
Ground pepper to taste
METHOD
Cut the tops and bottoms off the carrots, then peel them.
If you have a grater, use it to shred the cabbage and the carrots into really, really thin strips. If you don’t have a grater, cut the cabbage and the carrots into really, really thin strips. Then cut them across, as the strips tend to be a bit long.
Put the cabbage, carrot and mayonnaise into a bowl. Mix thoroughly. If there isn’t enough mayonnaise to coat all of the cabbage and carrot, add a some more. Season with the pepper.
ADDITIONS & ALTERNATIVES
Use red cabbage instead of white. Use yoghurt instead of some or all of the mayonnaise.
Add a stick of chopped celery. The acquisition of wealth is no longer the driving force in my life.0 -

Add a stick of chopped celery.
My tips:- Don't use red cabbage - it makes the mayo an odd pink colour
- Definitley add celery
- Definitely add an apple - red or green
- Soak some sultanas in some boiling water (to plump them up) and add them
- Walnuts and spring onions are good too

I know this may sound daft but years ago when I was on holiday in Zimbabwe I had a great coleslaw, now I know it had grated carrot, white cabbage and onion but here's the thing it didn't have salad cream or mayo or yogurt in it. My problem is I don't know the missing ingredients could it of been white wine vinegar, water and sugar? I remember it being very crisp.
About mil's not giving out their recipes - could it be that they cheat - its just I know someone who claims it their recipe infact its store bought and the coleslaw has parsnip in.0 -
My recipe is much the same as those mentioned but for the dressing I use mayo, milk, white wine vinegar, mustard powder, salt, pepper and pinch of sugar. Put it all in a jam jar, shake like mad and pour. Lovely...0

Noted with thanks.
