Recipes for Home Made Coleslaw?

My version is as follows:
1/2 white cabbage
4 good size carrots
1 large onion
Celery (optional) I tend to leave this out when making this for the kids. If you do put it in, remember to 'de- string' it first using a potato peeler. Just run it down each stalk to get rid of the thread like bits in the skin.
Mayo
Salt and Pepper
Lemon juice
Finely grate all your veggies or leave it course if you prefer. I prepare mine on a v slicer using the fine julienne blade.
Scoop loads of mayo in on top.
Mix well.
Add a squeeze of lemon juice and season to taste.
Sometimes I add a bit of salad cream too, just depends on how much mayo I have left.
This keeps well in the fridge, in a tightly sealed container for up to a week, just give it a good stir each time you go to serve some. I also find Lidl brand mayo very good for making this and it's a fraction of the price compared to the well known "big dollop" brand

Carrot, apple & celery can be a nice alternative to the traditional mix, especially if you are feeding children:D

Hi all
In my effort to be more OS since joining this site I had my New Year's dinner all planned
HM soup (smoked ribs soaking in water now to reduce saltiness but keeping flavour, leeks ready, carrots ready - broth mixture ready - slow cooker on standby
HM Steak Pie (well almost - bought puff pastry) - good stew reduced in Asda last week !
With new potatoes and cabbage - this is where the problem starts - I bought white cabbage instead of green cabbage
Desert is homemade apple crumble
I have made HM coleslaw before but always with a smaller piece of cabbage -can anyone tell me how long I can keep the grated cabbage in the fridge for or can I freeze it - will I be better adding all the mayo and keeping in the fridge - I reckon I would use it all by next weekend

Unfortunately I panicked and bought a green cabbage - I had to go to the shops as I needed Cat biscuits
so I now have a green and white cabbage to feed three people
I will mix the 2 together I think and make some coleslaw -and my dad will go home with a nice doggie bag for dinner on Monday

If you haven't already grated all the white cabbage it will keep for a couple of weeks in the fridge,but I think it will wilt fairly quickly if its already been grated.Btw I use a green cabbage like savoy for coleslaw,I use the outer green leaves as a veg dish and the inner white part for coleslaw.0

I have not grated it yet - I will leave it until next week once back at work as I know we will use the coleslaw quicker then

AS I live alone I usually buy 1/2 a white cabbage and chop it all up and put it into a bowl water in the fridge.I cover with cling film and just grab a handful at a time and microwave it when I'm dishing up my dinner. It seems to keep quite well like this and 1/2 cabbage does me for about a week. I also peel and slice my carrots and spuds as well and put them into a bowl of cold water in the fridge. This stems back to the days when I had a busy job and a family to raise. One good hour twice a week peeling and it meant that I didn't have to stand doing it everynight .0
