    I often add a little nutmeg (brings out flavour of cabbage) and a squirt or 2 of tabasco for a bit of bite. I either use a bit of yogurt with my mayo or jus mayo itself.
    To stop it going sloppy add a little mayo at a time until you have the consistencey that you want and try to make coleslaw only an hour or 2 before you use it.

  • I sometimes add a skinned chopped orange to my HM coleslaw - think posh name for this is Florida coleslaw!!

    1 Small red cabbage finely shredded
    1 carrot grated
    a little finely chopped red onion
    half a grated raw beetroot
    mayonnaise
    splash of white wine vinegar

    I mixed up the vinegar and some mayonnaise until it tasted a bit like salad cream then I added it to the rest of the mayonnaise, and added it to the veg.

    I forgot to add the beetroot this time as I read on another thread to put that in last. But it was still lovely. (and pink!)

    We make ours with white cabbage, carrots and onions, but also add grated celeriac, which gives it a really nice taste (I don't really like celeriac cooked, but its lovely raw).

    Then dress with whatever takes your fancy - mayo, fromage frais, just a little oil and some white wine vinegar... Sometimes we add mustard or garlic or chilli - it really depends what we are going to be eating it with.

    An easy-peasy and different coleslaw from an American friend of mine:

    Shred cabbage
    Add a tin of well drained crushed pineapple
    Add mayonaise/salad cream as preferred.

    Voila - very tasty and very refreshing too.
  • My recipe is very cheap and so tasty that when I visit friends they often ask me to take a bowl of my homemade coleslaw.
    Finely slice about a quarter of a white cabbage
    Grate 2 big carrots ( 3 or 4 little ones )
    stir together in a bowl with a couple of big dollops of Tesco Value Mayonaise
    Fool me once, shame on you. Fool me twice, shame on me. Fool me three times and I'll smash your face in. :D
  • I sometimes add cashews and chopped dried apricots to my coleslaw to make it more exciting!
    It's better to beg forgiveness than ask permission.
  • For a low fat version i use red cabbage and white cabbage
    red onion or chives from the garden
    carrot
    apple
    Low fat mayo made a bit runnier with balsamic vinegar from Lidl.

    its yummy with bar-b-que stuff

    Thanks for all your ideas goning to try some with my HM cornbeef and onion pie i made today..... didn;t relise that everything i am eating tonight, is going to be HM including the bread...
    Hoping that when I start looking after the pennies, and the pounds will take care of them selves :j

    I have been given the task of making coleslaw on Boxing Day for a buffet and 25 people will be there. Now I know that this isn't really a big deal but I just don't know what to use for the dressing part as I find that mayonnaise can be a bit dominating, I'd like to make it a bit lighter. Also, I've had a thought to add some chopped fresh cranberries ... would that be horrible? or great?

    I'd love any suggestions so that I can relax about it!
