    I make a marinade with honey and soy sauce and add things like mustard, garlic, spices etc.

    But honey and soy sauce are generally a good base
  • Is your 7 spice the Arabic seven spice? If so then what about marinading the chicken in that made into a paste with say lemon juice and oil?

    I use this and add tomato puree, garlic and a little ginger, works well on chicken or pork, yum

    Hi

    I've got a couple of chicken breasts in the fridge for tea tonight and thought about some kind of marinade but I've done a search and there seems to be an overwhelming number out there but with ingredients I don't have.

    I've got garlic (a bit), lemon juice, honey, salt, pepper, worcester sauce, olive oil, white wine vinegar (I think), various herbs and spices. Can I make anything nice from this lot and if so what do I do?

    Any help gratefully received.

    Lemon and honey is always nice - just not too much honey or you will end up with a sweet chicken. It also makes it stick to your baking dish leaving you with quite a clean-up job.

    Depending on what spices you have, you can make a good rub: 1 tsp each paprika, salt, cumin, dried thyme, chilli powder (maybe less chilli if you don't like heat). Mix with a little oil to make a coarse paste and rub in to chicken. Roast in 180C oven. Could roast a little garlic too as it goes lovely and sweet.

    Hope it works out well - I did it last week and my husband loved it! Mind you, I used a poultry roaster with some beer in the bottom steaming part to keep it moist, but I think it would work just fine without it. Have a nice dinner...!

    Thanks, I do quite a mean plain roast chicken so not anticipating any issues on the moist-front :rotfl:I think OH might have dropped the cumin on the floor last week but I'll have a rummage and see what I can find. We definitely have paprika, chilli and salt from that lot so maybe I'll just throw a few things together and see how it turns out.
