    One of my current faves for chicken is Garlic & Lemon.

    I would lay out a largish piece of foil enough to cover the chicken pieces as a parcel, Oil with Olive oil & place the chick on.
    Take a lemon & cut in half (short way), then squeeze the juice from one half all over the chick pieces (turning the edges slightly on the foil saves it all runnning off ;) )
    Dust with garlic powder or place garlic slices or smear with paste - really doesnt matter which.
    Then slice the last piece of lemon & place these all over. If you remember you could zest the lemon 1st (before cutting) & add that too.
    Finall seal the chicken in the foil - place in a freezer bag & freeze!

    when you want to eat it, just get the whole thing out the night before to defrost & it will marinade in the garlic/lemon mix while defrosting & when its time to cook the whole foil parcel can be popped it the oven saving mess too :A

    Jamaican Jerk seasoning mixed with a little oil and rubbed into chicken breast is really tasty (then grill or BBQ, rather than bake)

    And can I also 'second' the above poster's suggestion of lemon juice and garlic!

    I love a lemon-based marinade, use it for both chicken and lamb. It would be fresh lemon juice, garlic, salt, pepper, and a big handful of chopped mixed herbs from the garden - currently, oregano, thyme and rosemary.

    Another nice one is lemon and honey, with or without chilli.

    I eat loads of chicken breasts and usually cook them plain.

    i have

    cumin
    5 spice
    chilli powder
    onion powder
    garic powder
    7 spice
    corriander
    paprika
    smoked paprika

    few spices to work with, not sure what liquid you add.


    BTW i have freh garlic too.

    I wouldn't use the fresh garlic to marinade with unless you want to stink of it!
    Try mixing some of your spices with natural yoghurt and smear it over.
    Ginger, chilli and soy sauce is nice too.

  • Try 1 table spoon of paprika, one of cumin, one of lemon juice and one of softened butter. lightly coat the chicken. :)
    I tend to roll my sliced chicken in it, stir fry and put in wraps.
