BARBEQUE SAUCE
This is a simple, yet versatile barbeque sauce. You can marinade things in it, cook things in it, dip things in it or just use it as a sauce.
INGREDIENTS
2 tablespoons of butter
1 tablespoon of sugar
2 tablespoons of brown sauce
2 drops of Tabasco chilli pepper sauce
3 tablespoons of tomato ketchup
1 tablespoon of Worcestershire sauce
METHOD
Put the butter and sugar into a saucepan on a low heat. Melt the butter and sugar. Stir frequently to stop it sticking.
Remove the pan from the heat.
Add all of the other ingredients. Mix thoroughly.
ADDITIONS & ALTERNATIVES
Add 1 tablespoon of mushroom ketchup at the same time as the other sauces. Mushroom ketchup is a runny brown liquid, obviously made from mushrooms. It’s available in the “better” supermarkets.
TIPS
This will keep in the fridge for 48 hours.The acquisition of wealth is no longer the driving force in my life.0 -
we normally just use honey and let it sit in a bag overnight and let all the flavours infuse. and then keep spooning it over whilst cooking. Also inject it under the skin and you will get lovely tasty chicken.Has anyone seen my last marble:A:A:A:A

Hi Guys
Is it possible to freeze "fresh" chicken pieces in a marinade and then cook them at a later date (after defrosting) ?
Had some bbq & chinese style chicken at the weekend that was nice, but probably had a lot of additives and calories in !! (packet of frozen bbq chicken). Wondered if it was possible to replicate the idea at home with plain fresh chicken thighs and drumsticks. Wanted to freeze the pieces raw in a marinade and then cook when taken out of freezer, rather than freeze the cooked chicken.
Would love to know if anyone does this and any ideas, recipes etc greatfully received if so.

Yes it's absolutely fine to freeze raw chicken in a marinade. I do it frequently.

hi shep, we slice raw chicken breast into small pieces and freeze in different marinades etc a chinese style one for stirfry we shake into a bowl some soy sauce, lemon juice, garlic, fresh ginger and 5 spice powder and if we have in stock a drop or two of seseme oil. curry pastes work well. also if you have a b&m close by i bought some nandos dry marinade the other day for 29p i think it was. put the chicken into freezer bags and stick into the freezer, all though i do defrost them before i cook with them. hope this helps.Grocery Challenge 24th Feb-28 Dec 2012 £2000/£1404

This is the very question I was going to ask! If we (ever) get a hot summer, the last thing I want to be doing is faffing about in the kitchen. I've been looking out different marinade recipes to put diced chicken cubes, drumsticks, etc., so this is perfect!
I did see in this month's Good Food magazine there's a lovely smoky chicken skewers recipe as part of their tapas section. Will be looking out some more!

Thank you so much for the links and suggestions. One batch of thighs now marinated and ready for tonights dinner - another batch now sitting in the freezer. Looking forward to trying many more of the ideas.

Nigella Lawson does this all the time. She mixes her marinade in a ziplock bag, tosses in the chicken pieces, ensure they're covered then seals the bag and throws it in the freezer. Then it's just a matter of cooking them.
I think she started doing this when her children were little, after her first husband (John Diamond) had his surgery for throat cancer. We do this all the time. Our favourites are the marinades designed for chicken kebabs in the 'Takeaway Secrets' book. We just adore them.
I have a vacuum sealer so just seal the chicken in with the marinade and chuck in the freezer.0
