    Sesame oil, soy sauce and Chinese five spice make a great marinade for chicken or pork. I use it for kebabs or stirfry, sometimes add mirin and a splash of balsamic vinegar but it's fine without them!

    sometimes I just use a bit of olive oil, some honey and soy sauce (if feeling really lazy! no real quantities - just chuck in enough of each to make enough marinade to cover the meat!
    my satay marinade is simply a couple of tablespoons of peanut butter (please yourself as to smooth or crunchy), same of sunflower oil, dash of soy sauce a clove or two of garlic crushed up and a bit of fresh ginger grated (about half inch - you only want a hint of it). chuck everything in a plastic bag and smooosh it until the meat is well covered. marinade for a couple of hours or overnight is best. then either fry in wok, bake in medium oven, or BBQ. for however long you usually take.
  • Use thigh meat, not breast.


    You could marinate in soy sauce, sake, mirin and seasoning.

    Or salt, pepper, vinegar, sugar and crushed garlic.

    Or yoghurt, lemon juice, salt and pepper. Maybe with some tandoori powder. Or paprika.

    agree with you that thigh meat is best for flavour Jojo - but they are fiddly little bu99ers to debone and cube for kebabs!

    True - but the difference in cost makes it worth my while to try :)

    does it really matter which meat, considering it's going to be marinaded?

  • Yes it has to be done with thighs as breast is just too dry . The first time i made the chicken doner i got the thighs with the bone in it took ages second time i bought skinless and boneless and it was a lot quicker a pack of 6 costs £3 in Sainsburys then i cut into strips

    Hi all,

    I'm hoping the lovely people here can give me some inspiration. :A

    I have some chicken breasts sitting in the fridge and I'd like to grill them in the George Foreman grill. However, I'm stuck for tasty, fool-proof marinade ideas... Can anyone help with a tried-and-tested recipe? I need to use them up before it's too late as there's no room in the freezer.

    Sweet chilli sauce is always nice and easy,

    Leom juice, lemon zest, chilli and garlic. Leave it in there for a couple of hours and serve with in a crusty roll with coleslaw.
