Try 2 spoons of soy sauce, 2 spoons of brown sugar, a squirt of honey, a clove of garlic and a pinch of coriander.
I think this is right, I do it on autopilot now and can't find the recipeBut it is gorgeous
Also, tahini makes it better than s%x!! I have it with salad, onion, mushroom and pepper and plain boiled rice on a pitta bread

All recipes for 4 people:
Lime and ginger: juice of 3 limes, 2 x tablespoons of lazee ginger (or fresh grated root ginger), mix together, add chicken. Marinade
Greek chicken: put chicken in a large bowl, add the zest and juice of 1 large lemon, 5/6 tiny garlic cloves (the ones no good for anything, or 3 normal ones) squashed under the flat of a knife, twaspoon of oregano (or fresh if you have it, 3 springs), good splash (1/2 a glass) of white wine and a good glug (2/3 tablespoons) of olive oil. Mix well, add chicken, marinade
Tandoori: 1 pint plain yoghurt, 2 caps malt vinegar, juice 1 lemon, 3 tablespoons olive oil, 1 teaspoon chilli powder, 4 tablespoons tandoori powder. Mix above together really well (pockets off spices often hide) then add chicken and marinade
I also like the honey mustard soy chicken like jeni-b
Essentially thought, something acidic (lemon, lime, orange, wine, vinegar [but in limited applications]) and some flavourings: herbs, mustards, spices, wasabi, tabasco, harissa, bought spice pastes (i often use thai curry paste, watered down). Stick the meat in and leave for as long as you like
Some chefs say you shouldn't leave chicken overnight, but I do, and find the flavour amazing

I use this recipe from Delia. I substitute fresh or frozen HG plums, too. It's good to freeze, so is quickly available.

Used this on pan-fried mushrooms and it came out with a great taste. Hope someone else here can enjoy it!
Ingredients:
1 vegetable stock cube, finely chopped
onion powder
oregano
finely-chopped garlic clove
plenty of lime juice
splash of olive oil
Pretty much add the ingredients to taste - I used loads of lime juice and oregano, but I think it's pretty flexible.
How I used them:
Clean your mushrooms, mix in the marinade and leave for a few hours. Pan-fry for about 10 minutes, mix in with the pasta and enjoy.

All you do is mix the following in a bowl, and then marinate ANYTHING with it. We've used chicken, tofu, salmon, tuna, potatoes and mixed vegetable. It even works as a dip for stuff like breaded cheese or veggie protein
3 tbsp soy sauce
1 tbsp chopped chillis
1 tbsp chopped garlic
1 tbsp honey (or sugar)
1 tbsp oil (any kind, works as well without it though)
lemon juice - if you have it!
We use those jars of lazy chillis and garlic, I find it actually saves money as I'm not rebuying fresh chillis and garlic all the time.It will be mine in 2009: 1. MacBook, 2. Spa session, 3. Money/vouchers

I want to get organised and marinade some meat/chicken in freezer bags. I can then take one out the night before and it will be all ready to cook the next evening when I get home from work.
Does anyone have any suggestions for different marinades?
