As the title says I just want to say thank you. I had a barbecue on friday night (to help cheer me up, long story). I asked for help on here, noted down recipes from other threads. I made up some marinades, skewers, microwave sponge cake for the kids (they loved this!), lots of things. OS also helped me prep and the night was a total success (apart from the people who said they would come along and didn't  and didn't bother letting me know ). In total I ended up with about 25 people. They all had a smashing time.

So a big thank you to everyone on here, keep up the great work guys. :T

    Hi guys

I've got 4 nice chicken legs for dinner tomorrow and normally I'd just roast them but I thought it'd be nice to marinade them. I've got a pretty full store cupboard so I thought I'd ask you lot what your fave marinade is and what you'd do with them. I can marinade them at dinner time ready to be cooked about 7.30 tomorrow. Any ideas?

    Cheers ears :p

OOPS!!! Just found the marinade threads.........really must look harder in future!

    Hiya,

Being a vege I'm not sure what my marinades taste like but hubby certainly seems to like them.

I did some pork strips the other night for a stir-fry, no recipe just a general chucking in of bits I thought would be nice. I used some BBQ sauce, tom puree, balsamic vinegar, brown suger and soy sauce. Sounds awful now seeing it written down! I thinly sliced th epork and mixed all the above in a bowl, left it in the fridge all day and added to stir-fry that night. He seemed to like it!

Hope you find something you like!

  • I do a spicy marinade for pork chops that I think would be okay for chicken too.

In a flat dish pour in some olive oil just enough to cover the bottom add the following:
    1tbsp tomato pureé
    2 tsp crushed garlic
1 tsp mild chilli powder - or if you like it spicy add more in to taste
    freshly ground black pepper
    1 tsp mixed herbs

Mix well and place pork in the dish turning to ensure it is coated on both sides.

    Cover and refridgerate over night.

I tend to turn the pork over in the morning and let it continue to marinate til required.

    Tea

    Hi Nix,

This is a really simple one that I often use for chicken skewers on the BBQ.

    Lemon juice (fresh or Jif)
    Lemon zest
    Olive oil
    Garlic

Lemon juice is great, I just do lemon juice with basil and garlic and its great, you onlt need to marinade for 5 mins.

I have a bbq sauce recipe but didnt work as well on chicken as it did with pork unfortunately. It was very yummy with pork ribs and I must cook some more soon......!

Our standard simply marinade which always gets raved about at BBQ's is
equal quantities of lemonjuice, soya sauce, sunflower oil and lots of crushed garlic.
It is gorgeous with chicken or pork.
