Hi has anyone got any recipies for marinade.
I've got some chicken thighs and some drumsticks and i fancied jazzing them up a bit instead of just roasting them. i've got garlic,ginger,chilli,oregano,soy sauce, worcestershire sauce and lots of other herbs and spices but i'm scared of mixing them together and thought one of you good people would have some tried and tested recipies (or hoped anyway)

I marinaded some chicken in pesto last night - that was lovely! Using your ingredients, I'd put the garlic, ginger, chilli, soy sauce and some oil together to make an oriental type marinade. If you put in 'marinade' under the recipe search field on the bbc food website loads of recipes come up - hope it help!0

some of my favourites;
use the juice of a lemon on some chicken cut into strips, stand for 10 mins or as long as you have, grill or griddle.
grainy mustard with a little creme fraich ontop of salmon fillet then grill
grateed ginger, crushed garlic and some fresh chilli and mild olive oil/ground nut oil, leave for 10 mins or as lon as you have, grill or griddle, great with chicken or fish.

I do a salmon teriyaki by mixing 2tbsp soy sauce with 1tsp brown sugar for each salmon filet, and marinading for a few hours. The sauce goes nice and sticky when you grill/fry the salmon.0

For chicken, put lemongrass, chopped/grated ginger, crushed/chopped garlic, turmeric, ground coriander, brown sugar and bit of olive oil in bowl and mix well. the longer you leave the chicken to soak in it, the tastier it is. Mix some olive oil with salt, pepper and loads of paprika, rub into the chicken, then leave for a bit and grill or bbq. Simple but yummy....0
