    I am also working from home today, and have made a large pan of carrot, chilli and red lentil soup which will do two of us for lunches for the rest of this week.

    I had prosciutto di Parma, organic free range hardboiled eggs, organic cucumber, organic mini Roma tomatoes, organic celery, organic apple cider vinegar & organic EV olive oil,

    2 slice  x egg mayo sandwich and some mini plum tomatoes. I also had 3 celebration chocolates, because someone brought them into work.
    2 cans Pepsi max, fridge cold and lovely 

    I estimate at £1.10, egg 25p, mayo 10p, bread 10p. Cans 2 x 25p. Tom's 15p.

    Didnt include the chocolates.
  • Looking at the freezer, and I've got half a side of salmon, some frozen spinach and a pack of pastry... so I'm thinking salmon/soft cheese and spinach parcels? 

    If I flake up the rest then I'll probably refreeze to make a savoury rice the week after. 

    Salmon was around £10 per kilo in the sale, and pastry is store own which was about £1 when bought, so assuming 5 lunches and 2 main meals would work out somewhere around £1.70 per portion? 
    I'm not an early bird or a night owl; I’m some form of permanently exhausted pigeon.

    On Friday husband was working from home, so I had two soft-boiled large organic free range eggs and a Baxters Super Good root vegetable & turmeric soup bought when on offer at Waitrose recently.

    Looking forward to lunch tomorrow (despite not yet having had dinner)

    Homemade carrot and coriander soup (5 portions made of just 11 carrots 2 potatos and a stock cube and water) so very cheap. Slice or 2 of low cal nimble bread

    2 chicken drumsticks off tonight's chicken 

    Small pot of red pepper houmous and carrot sticks and grapes for snacks mid morning.


  • Didn't know that Nimble bread was still about ! My mother used to eat it on her diets. 

    Don't know what I will get tomorrow as we are out of prosciutto and wild smoked salmon. Leerdammer is now using an unspecified vegetarian coagulant so not buying that anymore. I know that I will have a 200g pack of Del Monte fresh melon though (on offer for 1.49 at Iceland)
  • A mixed salad with a hard boiled egg and some prawns and feta cheese tomorrow,  a couple of plums for snacking.
