Yesterday was leftover pasta from the night before with tuna, broccoli and pesto.
Today is a pitta bread with tuna and sweetcorn filling, handful of cherry tomatoes, satsumas and a cereal bar.2 -
Don't do lunch boxes anymore having retired but still have to eat lunch and often try it make it something I can make earlier in the day or even the night before to have cold. Today's lunch is sweet chilli noodles with chopped up veg in it.
Just cook the noodles and cool down quickly - I always break them up before chucking into the boiling water so they're in bite sized pieces. Once cooled down add chopped up veg from the fridge - peppers, tomatoes, mushroom, cucumber etc and add some sweet chilli sauce and mix it all together. It makes a very quick, fairly cheap lunch as using stuff you've already got so it's good for an end of week lunch using up stuff before your next shop.

Today lunch was a pot of sliced chicken breast (leftover from last night) and a little tub of salad cream for dipping/so it's not dry, two baby bel, a tomato swirl, a bag of grapes, and I had a banana at 10 with a cuppa.
I have no idea about how to cost the above... but in case it's of interest/useful, not sure where I copied this recipe from so apologies for the lack of credit. You can also make them tomato and cheese, or garlic cheese by adding a mature grated cheese at the tomato puree stage:
tomato swirls200g plain flourStir salt and pepper into the flour then mix in the water and oil to make a sticky-ish dough. Roll out* then spread with tomato puree and sprinkle with garlic and herbs. Roll up like a swiss roll* and cut into 1cm pieces with a sharp knife. Bake for 12 minutes at 180C.
75ml vegetable oil
50ml water
Pinch of salt and white pepper
1 tbsp tomato puree
Sprinkling of garlic powder
Sprinkling of mixed dried herbs (I used oregano, thyme and sage)
*covering the surface with grease proof paper, a silicone matt, or cling film can make it easier to roll, or flour the surfaceI'm not an early bird or a night owl; I’m some form of permanently exhausted pigeon.5 -
I had day 2 of tuna rolls. I didnt take soup today. I had a packet of wheat crunchies and a high fibre cereal bar. Cereal bars were 20p each , wheat crunchies 25p per pack. Tuna roll was 70p. I also had 2 cans of pepsi max at 25p per can, bought at Christmas in bulk.
£1.65. total.
Then I went out for dinner and it was £29 for two courses and a drink. Nice to do, but wont make a habit of it.2 -
