Gone a bit quiet in here 🤔

Today I took LO pasta from last night. For tomorrow I’ve made couscous with roasted peppers, olives, tomatoes and feta.
    Tomorrows lunch sounds delicious

Last of the celery and Stilton soup from the freezer today, with a couple of slices of wholemeal bread. Really hoping that is the end of soup season 🤞

Day off today but packed lunch planned for next 5 days. I have access to a microwave at work.

Tues: veg stir fry and noodles (left overs but noodles and veg taken out before sauce added and sauce in a pot to add before reheating - so it does not get absorbed into the noodles overnight) fruit and yoguhrt.

Weds: pasta salad with hummus dressing (going to fry the last of the veg, cool, and add cherry tomatoes, pickled beetroot and cucumber) fruit and yoghurt.

Thurs & Friday: lentil & veg lasagne (base from the freezer makes 2 portions - need to make cheese sauce and assemble and cook, other times I use the base to make a shepherd less pie with mash) fruit and yoguhrt.

Sat: spicey veg and lentil soup (from the freezer) with a cheese roll, fruit and yoguhrt.

I get into a bit of a rut with my work lunches and certainly got some good ideas.

Tomorrow I have baked a loaf of bread. Well I mean to say, I put a packet of bread mix into the breadmaker, added 300mls of water and pressed a button. Not bad for 45p. (Was a wrights half price)

Two slices of that, 2 slices of Aldi edam and some tomato made my sandwich.

I have some cashew nuts, grapes and celery to go with it.

Going to be waiting in tomorrow for a builder, after a nightshift so I know I wont be bothered doing anything.
Thats why Ive just popped some chocolate protein overnight oats in the fridge. Very tasty, filling and super cheap!
Will probably add a sliced banana to it as well.
  • Just made two days worth of roasted sweet potato couscous with blue cheese and walnuts 😋
  • Tomorrow is lentil, beetroot, feta and walnut salad.

Monday is my day off, so I do my supermaket shop. Lunches planned for the next 5 days.

Tuesday & Wednesday: Greek salad with hummus dressing, yoguhrt and fruit. (Saturday's yoghurt is still in the work fridge as a customer brought us doughnuts) I choose to eat a doughnut instead of yoguhrt so don't need to pack one on Tuesday.

Thursday & Friday: Shepherdless pie, lentil and veg base from the freezer topped with mash (makes 2 portions) with yoghurt and fruit and and leftover lettuce, tomatoes and cucumber.

Saturday: wholewheat noodles and stir fried mushroom, red pepper and carrot (stir fry sauce will be added before heating in the microwave) yoguhrt and fruit.

had a snigger here as I misread this as "shepherdess" pie & wondered what on earth could that be??! My bad!
