    Have made a Tuna Nicoise salad for lunch today with a honey and wholegrain mustard dressing.

    Made a couple of days worth of beetroot, feta and walnut couscous with a sherry vinegar dressing yesterday evening. Had a portion in my lunchbox today with some rocket.

    We are out of bread, so tomorrow its jersey royal potatoes with spring onions, mayo and chopped linda McCartney sausages. Its surprisingly nice. I will have a few baby Tom's and little gem leaves with it.

    Tuesday : pasta hummus salad, strawberry and yogurt.

    Wednesday & Thursday: feta salad, fruit and yogurt.

    Friday & Saturday : stuffed peppers, salad and yogurt.

    Due to bank holiday scamper to a stone circle and pretty churches, I have not done a shop, I will need to buy bananas tomorrow and only have 3 days lunches planned from the freezer.

    Tuesday and Wednesday: lentil & veg 'sheperd less pie' yoghurt and fruit ( bananas souced tomorrow on my way into work).

    Thursday: freezer soup and with cheese roll and banana and yogurt!

    I need to work out the rest of the week as I haven't done a shop and I am eating out of the freezer, fridge and haven't bought any new supply's this week.


    A quick root through the freezer has finds a homemade 3 bean, lentil and veg chilli (I thought I had run out of) and several portions of homemade lentil and veg curries ( I forgot I made)! I have yogurt to last the week and have spent 79p on bananas!

    So

    Friday: curry & rice, banana and yogurt.

    Saturday: chilli & couscous, banana and yogurt.

    So my total lunch spend for this week is 79p and I can avoid the supermarket this week!

    I had half a tin of tuna kicking around so that’s gone into some couscous with cherry tomatoes, roasted peppers, capers and an olive oil/red wine vinegar dressing, ready for tomorrow’s pack up 🙃
  • More of the couscous with red wine vinegar dressing plus cherry tomatoes, feta and olives. Plus some walnuts to add just before eating. Also got some apple and kiwi.

    It was LO pasta from last night’s dinner in today’s lunchbox. I’ve made two days worth of blue cheese waldorf grain salad this evening. Free pineapple from the Lidl spinny thing is this week’s fruit offering 🙃

    Only working 3 days this week as I am off on holiday on Saturday but booked Friday off to get everything sorted.

    Not done a shop this week yet, but will need yoguht and a few bananas tomorrow (I will get off the bus a stop early and go to the small town centre Tesco) then Friday I will do a shop for stuff to take away).

    Tuesday & Wednesday: lentil and veg pasta bake. (I didn't get milk for to make lasagne sauce as I would end up not using it all) so I cooked some pasta, mixed it with my lentil and veg mix and topped with the last of the cheese.

    Thursday : lentil & veg curry with rice.

    All with a yoguht and banana.

    Having used up freezer meals for the last 8 days of work lunches has freed up more than enough space in the freezer for my freezer blocks for our cool bags for holiday food and our Saturday picnic.
