  • Took advantage of Greek week at Lidl when I shopped at the weekend so lots of mezze lunches this week - dolmades, aubergines in tomato sauce, houmous, cucumber sticks, olives, feta, pitta bread 😋

    I need to take some more inspiration from this thread - it puts my cheese salad sandwich and 2 satsumas to shame!  It's an office day so at least I've brought something with me and I'm not going out and buying anything.

  • LO roast chicken, prosciutto and sourdough crouton salad with roasted garlic and lemon dressing. Melon for afternoon snack.

    Cucumber sticks, tomatoes, sweet potato falafel and some jalapeno houmous with nectarines and blueberries for a snack later.

    Cheese and ham quiche with coleslaw. 
  • I’ve made two day’s worth of cumin roasted aubergine, Brie, pomegranate and grain salad with olive oil and lemon juice dressing, chopped hazelnuts to add before serving.
  • Sort of tuna Niçoise salad with cold new potatoes for tomorrow 😋
  • Tomorrow’s salad box is cheese, hard boiled egg, cold new potatoes and coleslaw 😋
