    Part of the meat ration had to be taken as corned beef, so it was a real WW2 ration lunch box with a wholemeal bread and corned beef sandwich, no butter, with lettuce, tomato, cucumber, carrot and an apple, and a rock bun. I had a flask of tea.
  • Spiced roasted sweet potato, lentil and feta salad today.
  • Cheese, crackers, couple of satsumas and a cup a soup for me.

  • Soup season here. Made a batch of Thai spiced sweet potato for this week (plus some for the freezer). I reckon just under £2 for 5 portions. Bargain and yummy 😋

    Soup season here. Made a batch of Thai spiced sweet potato for this week (plus some for the freezer). I reckon just under £2 for 5 portions. Bargain and yummy 😋 
    I made the same soup last week and have the last portion for lunch today 😆

    Hi @JingsMyBucket. It was a made up one - sweated an onion and probably around 500g sweet potatoes, stirred through couple of tablespoons ish of Thai curry paste and cooked for a couple more minutes. Add stock to cover veg, simmer until soft, blitz and add coconut milk to taste/get required consistency/thickness. Sorry I can’t be more precise and hope that helps, JKS
  • @justkeepswimmimg that's perfect, thank you. I figured as much but wanted to see if you added any red lentils for bulk, etc. I'll likely add some garlic, cilantro, and lime as well.
