Am eating up the random food in the fridge and cupboards so had crackers, cheese, tomatoes, date and almonds for lunch today.2

Small amounts of organic Mozzarella, prosciutto di Parma, wild Alaskan smoked salmon. Two hard-boiled organic eggs, Diced organic cucumber, sliced organic spring onions. Copious amount of Italian Extra Virgin olive oil. Teaspoon of organic apple cider vinegar. An organic avocado. A tiny organic kiwi fruit. Walnuts, pistachios.
Missing:
Organic cherry tomatoes, organic beetroot, as we ran out.
Sounds a lot but this is to last 12 hours

Repeat of yesterday - crackers, two hard boiled eggs, cheese, some dates and almonds and an orange.
Pasta with homemade tomato sauce and chickpeas tomorrow.1 -
I’ve made two days worth of new potato, beetroot and smoked mackerel salad with a creamy horseradish dressing. Used up spuds, beetroot and one of the spring onions that seem to have been hanging around a while 🙃1

I'm in the office Tuesday and Wednesday this week. Working from home on Thursday.
I made some cheese topped bread rolls today and have one for tomorrow and Wednesday with tuna and mayonnaise and a little red onion. With a bag of wheat crunchies and some baby tomatoes. Cost about £1 each day.1 -
Slightly more summery weather so changing up the lunchboxes a bit 😀
Last week was salads with cold new potatoes and either LO roast chicken or tuna plus whatever bits needed eating up from the fridge. I’ve made couscous with tuna, capers, cherry tomatoes and roasted peppers for the next two days.

Thursday and Friday: stuffed peppers with a side salad and yoghurt. I have done 2 stuffed peppers as it only takes a few minutes longer than 1 so saves me time tomorrow.
