Aha! We went to Morrisons today and they had two different products: ‘sponge fingers’ which were on an end display alongside meringue nests and also ‘ trifle sponge fingers’ that were in the baking ingredients section.fatbelly said:

I had huge trouble finding filo pastry today - none in my delivery from the massive Sainsburys, but thankfully my partner is off work this week so off we went to the local smaller one, to find none. Nor in the Lidl or even M&S! Thankfully got a packet in the huge Tesco extra, but that's the only other supermarket in our town.
I've since looked up the recipe, should I be left without filo again - I use it to make a coiled Turkish pie that has lots of fresh ingredients, so where I'm usually stuck with whatever shows up in the delivery, it'd mean sending lots back. It looks easier than I thought, especially as I have a pasta roller to help get it nice and thin. At least easier than puff.
No idea if it's a local issue, or people have been snapping it up to make Christmas nibbles, or it's fallen out of fashion. I so rarely shop in person, it took me three supermarkets to notice that pastry is always next to the butter!2 -

I've only read the recipe so far, but it's more that hand rolling/folding multiple times is physically difficult for me, but getting my stand mixer pasta attachment to roll something many times is dead easy. I use it every week and it'll get pasta dough see through with no problems, so fingers crossed!sarah1972 said:

I blame my pasta-making addiction on Australian Masterchef - we watched a bunch last year, they seemed to always be making pasta, I expressed an interest, my partner gifted me a far too expensive Kitchen Aid attachment so I felt I basically had to use it.
I have a filo dough resting in the fridge, so if all goes well I'll use it tomorrow and make a lovely pie, sticking the store bought in the freezer for another day. If it all goes wrong I'll use the store bought and report back that it is in fact a nightmare!2 -

Does filo not absorb excessive butter? For that reason alone I would avoid even trying to make it.
Otherwise I'd be baking baclava every week! (Relatively straightforward and the smell is pleasant).No man is worth crawling on this earth.

Well, it was neither a resounding success nor an absolute failure. I did struggle to get it thin enough, so it's not quite as crisp as the store bought versions. I actually found the homemade version much easier to work with - I made a single sheet, filled and coiled it immediately, so it never had a chance to dry out. Far too much effort though, I'll not add it to the things I make regularly, but it's good to know that in a filo emergency I can make an approximation that's at least edible.
I have some lidl baklava sitting on my coffee table at the moment - probably for the best that the filo is actually quite difficult, I don't need to any more recipes for delicious sweet things I can make from things already in my kitchen swirling around my head!
