Another busy Sunday although had a nice relaxing start to the day.
Took the dog on the park this morning and did a small litter pick.
Have been busy in the kitchen preparing for the week ahead. Made a vegan banana loaf then froze the remaining bananas from the Lid! veg box. Made a batch of spiced courgette soup for work lunches. Made chilli tuna slaw for today’s lunch and there’s plenty left for another day. Did a meal plan for the coming week using stuff that’s already in stock, a couple of new recipes to try planned in.
Cashed out survey and TCB money. Some of the PA earnings are in $ so can’t transfer them until they’ve cleared. Will tot up properly tomorrow.
It’s also been another NSD, the first NSD weekend in a long time!Need to do finances properly tomorrow when I’m in work mode.
Tried a new YT yoga workout - Dance Yoga by Wellness Shraddha. Enjoyed it, lots of stretching.
Had a lovely soak in the bath with candles, although it’s starting to get too light for candles.

How do you freeze your bananas please. I land up making banana loaf when I would really rather not, rather than just wasting them. I am struggling to get walnuts to make it at the moment which does not help.

I don't eat nuts and have found a recipe that includes sultanas instead - sadly it's from an old recipe book, rather than on-line, but worth a search???

I sliced up the bananas and open froze them first before bagging up. I don’t use nuts usually, today I put sultanas and cranberries in plus a generous amount of cinnamon.

3 ripe bananas mashed up, 225g SR flour, 2 tbsp baking powder, 75ml vegetable oil, 50g brown sugar, cinnamon or mixed spice and dried fruit. Makes enough for 8-10 decent portions.

Just checking - do you really use 2 tbsp of baking powder?
