I use mine in scones. They freeze well too, so you could make a big batch and freeze them in 6s or smaller numbers. If it smells sour, I still use it.....my cut-off point is if it is actually separating out into solids & whey......tho' this is exactly what we used to have to sue for our scone-making years ago in school cookery lessons!

sorry but I am afraid I tend to throw mine away as the smell is just too much.
  • If it's just slightly on the turn, you can use it in scones (the lactic acid in the milk reacts with the bicarb in the raising agent, making carbon dioxide gas, to aid raising :D ).

If it honks, then it's past it, and you must chuck it :(

More info in this thread (you knew I'd find something, didn;t you ;) ). I'll add this later.

As always Penny, you are a superstar:A:T.

    Many many thanks.:T

    Hi everyone,

My partner and I have recently bought 4l of milk at Tescos. We normally buy smaller cartons of Tesco pure filter milk, but, like everyone else, we're trying to save us some money!

Anyhow, we haven't managed to use the whole container. The sell by was a couple of days ago, but we've still been trying to use it up! We have just over a pint left, it's going to go off in the next day or so.

The only idea I've had is to do a big pasta with cheese sauce, but we've had this quite a lot recently. Does anyone have any more adventurous ideas??

    Many thanks in advance.

  • freeze it as it is or make a cheese sauce and freeze the sauce to be used another time :) which reminds me, ive some cravendale due to go off in the couple of days so best make room in the freezer.

Scotch Pancakes or Scones are ideal for using up milk that is on the turn.

freeze it in icecube trays so you only have to use a block at a time. once you defrost it you need to use it immediately because it is already out of date so the smaller portion the better to my mind!!

or freeze in ice cubes and plop a couple into your coffee.. it melts really quickly and cools coffee to gulping temp (says the person with the asbestos mouth)

best bet is scones as somebody mentioned above, or soda bread. Both are quick and easy. Apparently sour milk reacts with the baking powder or soda and makes them rise. I also use the elderly dregs of my HM yogurt for this.

Remember that 'almost off' milk isn't sour milk - they are two separate things unfortunately. Gone are the days it wasn't hard to get unpasteurised milk, sadly....
