    Scotch Pancakes

    1lb plain flour
    7oz sugar, i use about 5ozs
    4fl oz oil
    3 eggs
    1oz baking powder
1/2pt milk, maybe more, depends on flour

mix all, add milk gradually, beat well, beating in air, should see bubbles in the mix, pre heat a flat pan or girdle on med heat and grease, put spoonfuls on pan and turn over when bubbles appear on the surface, might take a few pancakes till you get the heat adjusted right
  • Make normal scones but add sour milk to mix instead of normal milk. You can't taste it but it makes them lighter.

This isn't sour milk, it's 'gone off' milk. Pasteurised milk which is turning sour is going bad.

Unpasteurised milk which has soured is sour milk and smells quite interesting rather than revolting. You can make all kinds of things with it, including an interesting soft cheese which is just a solidified sour milk. I used to make that once upon a time when my milk supply was unpasteurised green top.

Pasteurised milk which has 'turned' should be discarded, not eaten, if the smell is sufficient to make you say PHWOOAR that's a bad 'un. If it's only just on the turn, you could use it, but it's still not sour milk!

Use it in baking as you would normal milk. As said earlier, scones are brilliant made with sour milk. I 'sour' mine with lemon juice when making them!

Hi exlibris, fresh pasteurised milk that you have soured yourself with lemon juice is a form of healthy curdled milk. Pasteurised milk which has gone for a little holiday to the land of smelly is bad milk, not healthy curdled milk :)

Please post me some of your scones...they sound lovely!
