Some of the pages discuss the different "types" of souring and how sour raw milk differs from sour pasteurised milk. The bacteria that cause the milk to sour are lactobacilli - not pathogenic. The turn the milk sugar, lactose into lactic acid. It's quite a fascinating subject!Trying to spend less time on MSE so I can get more done ... it's not going great so far!

Make your own Pot Noodles using a flower pot, sawdust and some old shoe laces. Pour in boiling water, stir then allow to stand for two minutes before taking one mouthful, and throwing away. Just like the real thing!0 -
A friend`s mum used to let milk go sour to make Irish soda bread - not sure quite how far gone it used to be though.0

I've got 4 pint carton of semi- skimmed milk that has soured and separated - would it be safe to use for cooking / baking? if so, what could i use it for?
If I have milk that's just on the turn, I freeze it and use it for cheese sauce
If it's really turned, it's no longer fit to eat.
Only you can decide which yours is

I have a really old book called 'Cookery Illustrated and Household Management'. Sadly no date in it. There is a whole section devoted to Keeping down the Household Bills, which includes 2 sectons named Making the most of Leftovers and Dodges to Prevent Waste!.
It lists the following- Sour milk cheese
- Sour milk scones
- Sour milk girdle scones
- Sour milk gingerbread
- Spiced Raisin Cake

Many years ago I bought a copy of this book in a charity shop (paid 50p for it), but it's one of the books that stayed behind when I left the ex-OH. I've been trying to remember the name of it for absolutely ages and you've just jogged my memory. I've been a-googling and found it on Amazon for £4.50 and just bought it again :j. Between that and my old faithful Mrs Beeton's, is how I learned all my baking and cooking.0 -

Nothing overly complicated please. Will have up to 4 hours from beginning to end as we have family coming up to us tomorrow.

If it's just slightly on the turn, you can use it in scones (the lactic acid in the milk reacts with the bicarb in the raising agent, making carbon dioxide gas, to aid raising).
If it honks, then it's past it, and you must chuck it

There are loads of uses for sour milk, some of which are:
Buttermilk scones (use instead of buttermilk)
Buttermilk pancakes
In fact, there's a whole page devoted to buttermilk recipes, where I would substitute it for soured milk:
