I ended up making Jackfruit seitan burgers last week and so ate those twice, as was trying to make room in the freezer, using up what hadn't been eaten, carbonara hasn't been made. I also made coleslaw with the cabbage, so didn't end up having Haluski or the Cabbage tart. I need more Just Egg than I have, so couldn't make the latter so will carry that forward (along with a few other meals)
This is my meal plan for the week (all vegan) :
I've doubled up on some recipes, to give me a bit of leeway; and also dependant on weather. Breakfast wraps are in there but may feature as some dinners (lunch).

I've made savoury muffins, parsnip mash, and I've frozen parsnip chips, so far. I've also just come across a recipe tonight for parsnip noodles, so I might try that. I will also possibly make a desert cake. Hopefully they'll all be eaten or frozen by then!

Not all to plan this week and one c/f but the stuff that needed using got used.

S - Chilli beef enchiladas, salad, garlic bread
S - Out for lunch
M - Spicy mince and chickpea stew, veg, rice
T - Chicken & veg traybake
W - Pasta with chorizo, tomato sauce and pesto
T - Lamb curry, rice, naan

A weekend of socialising so plan starts from tomorrow:
Mon - chorizo and sweetcorn risotto, broccoli
Tues - beans on toast
Wed - tuna steak with Mediterranean lentils, spinach and sun dried tomatoes
Thurs - eggs and avocado on toast (out for lunch)
Fri - halloumi, new potato and red pepper traybake3 -
All to plan this week.

S - Roast chicken crown with black pudding bacon and peppercorn sauce. Veg and potatoes
M - Fish finger tacos, salad, sweet potato
T - Takeaway for DS1's birthday
W - Sausage pasta
T - Spicy mince in black bean sauce, rice

Sat - creamy steak, blue cheese and broccoli gnocchi
Sun - halloumi and cannellini bean stew
Mon - sausage and leek pasta
Tues - beans on toast
Wed - prawn and broccoli Thai red curry, noodles
Thurs - cod tacos, quick pickled onions, avocado

Saturday - baked feta and tomato pasta (this is leftovers from last night and it's really delicious)
Sunday - home made melt in the middle burgers, wedges and salad
Monday - home made Thai red curry and rice
Tuesday - egg and chips (beans for OH but not for me as I can't abide bean juice and egg yolk mixing together 🤢)
Wednesday - lasagne and salad
Thursday - pizza
Friday - pan fried sea bream, new potatoes, spinach and cherry tomatoes
I'll bake a ginger cake for snacks during the week - yummy3 -

Can't remember if I stuck to the majority of the plan last week.
This week it's been mostly simple meals:
Fishless fingers, chips and peas
Curry ramen and mango rice
Tofu in orange sauce, oriental veg and rice
Mongolian tofu and rice
Hamburger helper style pasta x two night
Tomorrow is undecided.
