Friday ended up being pesto and pasta, as pesto needed using up, and there's leftovers of that too.
I had a good week this week with a TGTGB from a greengrocers which gave me a beautiful selection of items.
So next week, I will be working my way through the rest of those. I can't find the jackfruit ( though it is in the freezer somewhere); so I will have to rethink tomorrow's meal.
I just scored a great shop today from Her*n foods. So have loads to choose from. I'm hoping tomorrow I win the Olio salad jackpot, as I'm low on lettuce, but if not I will save my legs.
The only thing I should need for the meal plan this week is pasta, if I find the jackfruit.
