Got to mid-week and things went awry, stresses elsewhere took my focus but determined to get back on plan this week so there may be a repeat of some of last weeks meals.

Thu - Corned beef hash with either Yorkshires or dumplings
Fri - Some kind of fish meal. to be decided
I need to up the soup making this week and also make a cake, I'm thinking maybe almond or coconut.Be kind to others and to yourself too.5 -
It was all going so well until the oven decided to blow up the electrics and die. I won’t know until next week whether it is repairable or not so in the meantime it’s about how to use up stuff I’d already bought for a meal plan that I’ve had to junk.
Fri. Pork chop, asparagus, mange tout, spinach
Sat. Slow cooker stew with mange tout and purple sprouting broccoli
Sun. Lentil and coconut curry, spinach, green beans, naan
Mon. Seafood risotto
Tues. Slow cooker seafood lasagne, salad
Wed. Veggie/tomato sauce, pasta

F- freezer rake/takeaway
S-HM burgers, coleslaw, salad and some LO chippy chips from the freezer
S- Slow roasted beef, red chimichurri, various veg and roasted sweet potatoes
M- Dal, rice and naan
T - Teriyaki chicken thigh, corn cobette, salad, baked potatoes
W - Thai green chicken and veg curry, rice
T - Moroccan spiced lamb meatballs with pasta and HM tomato sauce.

F - Fakeaway KFC with HM chips, corn on the cob and beans
S - veggie biryani
S - toad in the hole, roast potatoes, roasted veg, green veg
M - Takeaway kebab (day of eye operation and likely to be home late as pm appointment)

W - pulled pork, boiled potatoes, veg?
T - gammon steak, chips, beans

Shame about the oven Bouicca21, the one I have in my flat is old and I fear may go any time soon. I finally bought an Air Fryer and love it - so I’m thinking as there is only me and getting on a bit when I do up the kitchen I can do away with the oven.

Last week all went to plan, apart from Friday that was going to be some kind of fish meal but, after struggling with an ailing freezer (now fixed), I didn't have time to go to the shop so we ended up with chips, chopped ham & pork and baked beans. This week:
Sat (today), H/m spicy courgette soup, chicken & pickle sandwiches, Cornetto
Sun - Beef slices (from freezer), steamed cabbage & carrots, mash
Mon - Gammon salad
Tue - Chicken stir fry & noodles
Wed - Steak pie, mash, cabbage
Thu - Jacket potato, savoury mince, peas
Fri - Lightly fried cod fillets
To be made this week: fruit scones, lemon drizzle cake, leek & potato soup and a batch of crumble mix for the freezer.Be kind to others and to yourself too.5 -
Not posted for a few weeks as have had visitors and then been away. Has taken me a while to get back into proper planning but it is very much needed as I am in danger of having more month than money. The weather has led me back to summery food but I’m trying to keep the shopping to a minimum so some repetition. So, from Tuesday until as far as inspiration went for now:
Tues - lamb burger (bbq), new potatoes, salad and coleslaw
Wed - tuna steak salad nicoise
Thurs - sausages (bbq), new potatoes, salad and coleslaw
Fri - prawn, chorizo and ciabatta skewers (bbq), salad
Sat - lamb burger and courgette (bbq), salad and new potatoes
Sun - tuna steak, courgette, salad and new potatoes
Mon - smoked salmon, herby cream cheese and pea pasta
