Beginning to get a bit of wiggle room in the freezer having used up some of the “ready to heat” meals, now I’ll focus on the “to be cooked” ingredients.
Sat - Pan fried pork chop with roast veg couscous
Sun - Arrabiatta pasta with prawns
Mon - Moussaka
Tues - Chorizo, orzo & sweetcorn stew
Wed - Chicken in gravy, stuffing, new potatoes & veg
Thurs - Egg & lentil curry
Fri - Fish ??

Plan and shopping done nice and early this weekend as have visitors from tomorrow for a couple of days.
Sat - sausage and fennel seed pasta, salad
Sun - balsamic chicken, potato and tomato traybake
Mon - salmon and courgette pasta

I've saved it too. I've got some chorizo in the freezer but will need to buy some orzo as it's not something I've got in the cupboard.
This week's plan:
S - steak, chips, onions, mushrooms
S - roast lamb dinner
M - LO lamb minced and make into swede and carrot mash topped cottage pie
T - keema curry, rice
W - Fakeaway KFC, chips, corn on the cob, beans
T - SC beef casserole, mash
F - Kedgeree

@joedenise I keep meaning to ask you for your KFC fakeaway recipe. Is it easy to hand?1

@JingsMyBucket - the KFC takeaway is nothing special! I vary the coating depending what I've got on the cupboard so it can be anything from couscous to instant mash powder mixed with some herbs & spices which also vary depending on what I grab from the cupboard but always includes smoked paprika, mustard powder and mixed herbs. Obviously couscous will be crunchier than mash powder. You could also use panko crumbs or bread crumbs if you prefer.
I just use skinless, boneless thighs usually although you can breast of chicken if you prefer, cut into pieces - I usually get 3-4 pieces from each thigh. They are then egg and breadcrumbed and placed on a baking sheet on the lower shelf of the oven.
I make my own oven chips by cutting the chips, par boiling for 5 minutes, draining and steaming them for a few minutes before tipping onto an oiled baking sheet and baking on the top shelf of the oven. Cook at 200 for 15 minutes before turning the tray 90 degrees, cook for another 5-10 minutes and turn the tray 90 degrees again. I turn the chicken 180 degrees at this point, both will probably need another 10 minutes or so to cook.
I always use the mini corn cobettes which I microwave for 5-6 minutes in a vented covered bowl. Beans done in a pan on the hob.
Then dish everything up and enjoy.7 -

Sat (yesterday) - Seafood platter with h/m wholemeal bread, ice cream & wafers for afters
Sun - Roast beef slices in gravy (from freezer), broccoli, carrots, mash
Mon - Cooked gammon slices (also from freezer), egg & chips
Tue - Corned beef hash, mini Yorkshires (there'll be enough of each to freeze for another meal)
Wed - Beef & green pepper stir fry in black bean sauce, noodles
Thu - Chicken korma, rice
Fri - Cod fillets - DH will be hoping for battered!Be kind to others and to yourself too.6 -
@joedenise thanks so much for that rundown. I always avoid making fried chicken because I think it’ll take forever. I guess I’m used to doing it the American way where we soak it overnight in buttermilk and seasonings then batter and fry it.Ooh!! I just remembered I have buttermilk in the freezer and pickle juice left in a jar of cornichons. I could use those for marinating. I think I’ll put that on my meal plan for later this month. We’re doing potluck brunch with an American couple in a couple weeks and I’m sure they’d love that. Scottish Mr. Jings will be outnumbered 3 to 1.

@JingsMyBucket - I just don't ever do battered and fried anything! Don't even possess a deep fat fryer! If it can't be baked or dry fried it doesn't get cooked!

For those who saved this recipe, I would suggest reading the reviews before cooking it .... ha ha, I didnt
I do agree with several of the reviews it needs more chorizo and garlic. Also the orzo, I used what I had a small orzo (Riso n74) which was okay but a medium sized one I think would be better.
Although I love lemon like some of the reviewers I found it overpowered the flavours - as per the recipe I used half a normal/average sized one, next time I'll add a little, taste, add a little, taste.
Its not all negative I did enjoy it and its a generous 2 person dish, so I have a good amount of leftovers, I'll have some as a salad dish with cold ham or prawns for lunch tomorrow.
