    Went completely off plan because I forgot I’d ordered fish online.  Still have some, plus the ingredients  for things I had planned for last week.  so … in no particular order

    mackerel and vegetable risotto
    sea bass and Mediterranean vegetables
    tuna anchovy olive linguine
    pasta puttanesca
    bacon and. Lettuce risotto
    ham salad
    ham egg and sweet potato wedges
  • Fairly certain I stuck to the plan last week 🙃

    So, for this week:

    Sat - sausages, new potatoes, carrots and sugar snap peas, creamy mustard sauce 
    Sun - prawn saganaki, tenderstem broccoli, toasted sourdough 
    Mon - smoked mackerel pitta pizzas, coleslaw, salad
    Tues - salmon pesto pasta, tenderstem broccoli 
    Wed - jacket potato with bacon, mushrooms and soured cream, salad
    Thurs - butternut squash, mushroom and gnocchi traybake, pesto
    Fri - butternut squash and mushroom hash, fried egg

    Coming in late as usual. 

    Sat : we had a takeaway curry from sainsbury's, cheaper than a proper takeaway. I had a few things I had to sort for my parents. So short of time today. I bought the curry for two, and a couple of vegetarian side dishes and it fed three of us easily.

    Sunday: chicken and stuffing, cabbage, pigs in blankets, vege sausage for me. Carrots, cauliflower and green beans. Coconut slice for after.

    Mon: leftover chicken and salad, new potatoes. Any other bits that need using up go on the plates and leftover salad goes into the following day lunchbox with last of chicken.

    Tues:quorn spaghetti bolognese, garlic bread.

    Wednesday: gammon and egg with jacket potatoes wedges. I will have vege bacon. Broad beans and broccoli. Maybe roast some tomatoes as well.

    Thurs : couscous and falafel, maybe some spicy chicken thighs. Couscous will be padded out with roasted veg.

    Fri some kind of fish.

  • Good afternoon everyone, hope you’ve had a lovely weekend! Stuck to our meal plan other than yesterdays, but didn’t spend any extra money than I would have done by sticking to it, so that’s a win for me. 
    Meal plan for this week;
    Monday- Ham hash & beans
    Tuesday- Chana Masala with rice
    Wednesday- Bean burgers
    Thursday- Sweet and sour with egg noodles
    Friday- pizzas (unsure if will be fresh or frozen yet) with salt and pepper chips
    Saturday- Quorn chicken curry & rice
    Sunday- No plans yet

    Breakfast is cereal, lunch for kids will be, sausage roll on Monday, egg mayo baps Tuesday & Wednesday, tuna Mayo and salad whole meal wraps Thursday and Friday. Pancake brunch on Saturday and no plans Sunday.

    Mon , HM wedges, egg n beans
    Tues, pizza n salad
    Wed, 3 bean chilli n salad 
    Thurs, cheesy garlic mushrooms 
    Fri, potato n leek soup with crunchy bread 
    Sat , cheesy potato n carrot mash n peas
    Sun, cheese n mushroom omelette n wedges :)

    Well we were supposed to have a beef stew for dinner last night - was happily bubbling away in the slow cooker and then events happened and we ended up in a Beefeater 😏  So potted up the stew, one portion went to the freezer and the rest is sitting in the fridge for dinner tonight:

    M - Aforementioned beef stew with mash and broccoli
    T - Mushroom Risotto
    W - Gammon steak, chips, egg, peas
    T - Mushroom bolognese
    F - Sweet and sour chicken
    S - HM Pizza in DH's BBQ pizza oven

    Lunches are a mission to use leftovers up from last week.  Firstly today's lunch is the last of my chicken and broccoli salad which I have mixed with some pasta.  Then Tuesday and Wednesday is Doenjang-jjigae which is a Korean miso stew which will use up the leftover tofu and courgette that's in the fridge.  Thursday I'm in the office and will either take a salad with me or possibly treat myself to lunch out...and Friday I can just make up something from what we have in the house / will probably have some leftovers.
    I love the sound of this Korean dish, do you use meat or just use the tofu? 
    Also I’m sure it’s a really lovely addition but the Korean chilli flakes, do you think you could sub for regular? @ruby_eskimo
    I just use tofu @MissRikkiC and here's a recipe that I use as a base.  I just dissolve the doenjang (miso) into rice water (basically the water you get when you're rinsing rice) in a pot then once it's starting to boil I'll add the courgette, onion and tofu till everything's cooked through.  Normal chilli flakes could work but to be honest it's nice without the kick for a very umami flavored dish.

    Meal plan is from Sunday to Saturday so yesterday we had a salmon tray bake using potatoes and carrots from the garden with an added leek plus a creamy pesto sauce using some light cream cheese and home made pesto using leftover salad leaves and carrot tops.  Was so tasty and DH really enjoyed 😋👍  Rest of the week looks like:

    M - Bolognese 
    T - Pizza Express inspired pollo pesto pasta
    W - Out
    T - Leftover pollo pesto pasta
    F - Mexican Fiesta (basically potato wedges topped with leftover chilli)
    S - Katsu Curry using up the leftover katsu sauce in the freezer

    Lunches are salad bowls for the week.  I roasted up a butternut squash and cauliflower that my parents gave me from their oddbox so will add those into the salads and I have some YS turkey mince that I need to cook up as my protein for the salads - might add in some fajita spices to give it some flavour.

    Surprisingly I have very little leftover from the weekend's family visit. This means I got the portions right and didn't go overboard buying and cooking far too much food which I have a tendency to do - so a bit of a win really. I'm back at work tomorrow after a week off so I need to ease myself back in by using batch cooked things the freezer.

    So far it's looking like this:

    Trout, new potatoes and salad - today
    Chickpea and chorizo rice one-pot
    Beef / veg casserole from the freezer, mash and savoy cabbage
    Chicken / veg curry and mushroom rice
    Lasagne from the freezer, salad and garlic bread
    Chilli from the freezer made into enchiladas or quesadilla with salad  
    Something easy with eggs or baked potatoes

    Hi all, I’d love to join in please to hopefully use of some of the fresh stuff before it goes off and the mountain of stuff currently in the freezer! 

    Tonight was pizza and salad 
    T - chicken stir fry with noodles and teriyaki sauce 
    W - Stuffed pasta and salad 
    T - Pork filet medallions with Dijon sauce, roasted jersey royals and greens 
    F - BBQ
    S - loaded fries 
    S - cottage pie, roast parsnips and carrots and cabbage

    My menu plan for this week is very beef-centric as I am using up the leftovers from Sunday's roast joint!

    Monday was cottage pie
    Tonight will be finishing the cottage pie
    Wednesday - no dinner (family funeral followed by pub lunch). Soup or a sandwich if we are peckish.
    Thursday - the last of the minced up leftover beef, turned into a beef, red pepper and macaroni cheese bake thing
    Friday - there will be leftover beef macaroni to finish up, I have no doubt.

    What a boring week, foodwise!  I am finding that is the trouble with stretching meals like this, it all gets a bit repetitive. Sometimes I freeze portions to have another time, but I am trying desperately to run down both freezers as they need to be emptied and defrosted before the autumn veg glut.
