Meal plan went to pot mid week, as weather improved, having salad today, already got beef joint defrosting for Sunday/Monday eating out tomorrow, Saturday, so will look at a plan from Tuesday on.Do I need it or just want it.2

Very confused about what day it is but got my head into meal planning yesterday evening. Ended up with lunch out yesterday and I’m out at an event this evening so plan from tomorrow:
Sun - Chinese pork belly slices, noodles and stir fried veg
Mon - salmon, new potatoes, broccoli, creme fraiche dressing
Tues - chimichurri pasta with tuna and broccoli
Wed - cashew nut egg fried rice
Thurs - mushroom omelette, chips and beans
Fri - black bean fajitas2 -

Meal plan for 6th - 12th June
M - Smoky vegetable Jambalaya
Tu - Mulligatawny soup*
W - Hungarian Casserole**
Th - Mung bean casserole and rice
F - Italian Sausage and pasta
Sa - Curry Plate (f), lentil dhal and rice
Su - Omlette, mixed veg and baked beans
* There is no doubt, the mulligatawny soup on the BBC cheap recipes site inspired my thought to make it for Tuesday, but my version (original source lost in the mists of time - sorry), doesn't use as many vegetables and is much more about the spicing and lentils.
** This recipe is not the source for the recipe that I make. I make Adele McConnell's version from The Vegan Cookbook. But if you add in 1 tsp caraway seeds, 250g cooked butter beans and 60g chopped walnuts, you would have the version that I make.
I had hoped that meals would be a bit more slanted to salads, but the weather is still a bit iffy and I need to make more use of my PC to save energy, so.........

Meal plan didn't go according to plan last week! The roast and veg lasted a couple of days and then I made too much tagine so we had that for a couple of days (and put some in the freezer! 😳😂) - we also ended up having 'not hungry' days so just grabbed some roasted tomatoes, olives, bread etc...
We've got a birthday celebration today and we're getting a takeaway- so we probably won't need anything for tomorrow due to leftovers from that 😉
So, the rest of the plans are:
Monday - roasted plantains stuffed with spicy blackbeans and a papaya salsa
Tuesday- artichoke and chickpea casserole with horseradish mash and green beans
Wednesday- chargrilled 'halloumi' with roasted peppers, short grain brown rice salad leaves and a tarragon dressing
Thursday - bbq jackfruit with baked pineapple salsa and wraps
Friday - ethiopian lentils with buckwheat pancakes
Saturday - fridge soup

I'm not sleeping at the moment and it's affecting my appetite, so the planned Ethiopian Stew that I'd defrosted, is still sat untouched in the fridge.
Tonight is meant to be Doubara Baskra, but will end up being tomorrow's pizza or meatballs and spaghetti with pesto. As DD2 and GD are both staying. (DD1 is having some middle of the week, half term respite).
Not sure about the weekend! I will report back.

DD2 is now home on and off til uni starts back, so that'll be fun budget wise 😏. We had the planned pizza last night.
Tonight should have been Cajun tofu and broccoli, but I took it out to defrost too late, so we are now having that tomorrow and instead.
Tonight I am now having the Ethiopian stew from a few nights back with fries, and DD2 (19) is going to have a very beige tea of plant menu dinosaurs, peas and fries.
Tomorrow's Jackfruit Goulash. mash and greens has moved to next week some time.

Our meal plan was stuck to more or less, just had tomato pasta instead of spaghetti and quorn meatballs, having that today instead. Currently don’t eat a lot of meat but my DH fancied pulled pork for next week, so that will be a change., will be having meat 4 days. Meal plan for next week ..
monday- Hot dogs
Tuesday- pulled pork & Hm coleslaw
Wednesday- pork & savoury rice
Thursday-Jackets & coleslaw/beans/cheese
Friday- pasta
Saturday- Bean chilli
Sunday- Mr brains, chips and mushy peas
breakfast is cereal for most of the week, back to school this week so lunch will be ham/cheese/tuna with salad on whole meal wraps.Haven’t made any cakes yet this week as last time I made ones I don’t eatwhich worked well as they are still going strong in the freezer. And we have scones left over that my son made for the afternoon tea.
Should be easy to stick to again this week.3 -
This week's meal plan has been adapted to take account of OH's foray into Lidlees. We had a meal plan, he had a detailed list .... anyway - here is the adapted meal plan 🤷♀️Monday - Thai red chicken curry (freezer) rice and spring rolls (we've got an extra day off so will round off the jubilee weekend with a treat dinner)
tuesday - courgette carbonara (courgettes from olio and ham from freezer - last scraps from a gammon joint
wednesday - chilli and cauliflower rice (both from freezer)
thursday - We are at a bring your own picnic concert. We have plenty of picnic bits and bobs in and I made a Lady Grey fruit tea loaf today which we can take with us
friday - fish (freezer) and home made chips
saturday - Japanese seared steak (OH's shopping influenced dinner)I made a rhubarb crumble today too so we will have that for the next few days3 -
Again same as last week, we have eaten two meals already.
Sat : went out, so had an all day breakfast at 2, evening was nibbles and drinks.
Sunday: chicken, stuffing, vege sausage, veg, gravy.
Monday: left over chicken, nibbly bits with salad and new pots. (Husband will request actifry chips)
Tuesday: pasta with seafood, rocket and tomato sauce, garlic bread.
Wednesday: quorn and lentil cottage pie. (Must buy brown sauce)
Thursday: couscous, halloumi, sweet potatoes, lamb kebabs. This may change to curry.
Friday: fish cakes and mushy peas ( fishcakes were homemade a few weeks ago, using up lots of fish and sprouting potatoes, made 18 of them)3 -
I used up the veg box more quickly than expected so second part of my two week plan has had to be re-jigged.
beef stir fry ( was meant to be chicken but spotted ys beef strips when I popped into supermarket for milk)
Mushroom risotto
cheese soufflé and coleslaw (bit of an experiment - long story but have 3 egg whites to use up so will try making a soufflé without egg yolk)
