Late on parade this week chums
but here is what I have sorted for this week
Today Monday
Shepherds pie (from freezer) steamed sweeheart cabbage.
I shall chop and steam the last of it and use today and tomorrow . it was quite a large one, and it seems to have lasted me for ages, and was only 45p on offer about 10 days ago, but every bit will have been used. The stalk has gone into my stockpot box in the freezer where I stick all the odds and ends of peelings, spuds ,carrot ,onion skins,brocolli stalks etc until I have enough to make some stock with.Nothing goes to waste in my house
Tuesday Sausage and mash and the last of the above steamed sweetheart cabbage
I usually sprinkle some grated cheese over it before I microwave it and some fresh ground black pepper and a slurp of sweet chilli sauce to liven it up a bit
Wednesday No Cooking tonight as I'm at my DDs house as its my youngest DGS Mikey's 18th birthday
Thursday Beef Chilli (from the freezer ) and rice
Friday another night off, as its Mikey's brother Henry's 21st birthday. bit of an expensive week but we will all be celebrating
Saturday Salmon, new potatoes and peas.
So although I'm using stuff from the freezer as much as I can there won't be a great deal of cooking for me this week.
Only just over a month before I go on holiday so I'm only shopping for real essentail stuff this coming month and trying to use upwhat I have in the fridge and freezer as much as I can. I know I have frozen veg in there as well as batch cooked meals so my shopping bill will be quite low in June (hopefully apart from birthday gifts ,but they don't come out of food budget at least

Hi All, been lurking in the background of this thread but thought I'd actually start posting our meal plans for the week here too. We do our shop on a Sunday which allows us to then prep lunches for the week (a hangover from when we were both in the office 5 days a week). There's only the two adults in the household, I do most of the cooking and on Tuesdays and Thursdays we each do our own thing because DH does the 5:2 diet.
Yesterday we had cottage pie using some mince from the freezer, a couple of carrots from the fridge, peas and the last of the potatoes along with some swede I also found in the freezer on top. The rest of the week is:
M - Beef, pack choi and broccoli stir fry with rice (pak choi is home grown)
T - Kimchi stew and rice for me (homemade kimchi, with tofu and courgette picked up from the supermarket)
W - Hunters chicken with chips and mixed veg (picked up the chicken this weekend but had everything else in)
T - Leftover Kimchi stew and rice
F - We're both out at different events
S - Homemade pizza (just needed some cheese and pepperoni for DH, had everything else in)

Hello, another lurker coming out to join the Grocery Challenge and Meal Plan threads to get back on track with my budget.
Dinners are in no particular order apart from Sunday's pot roast.- Chicken thigh and veg roasted tray bake with sweet potato wedges.
- Mince and tatties, carrots and broccoli.
- Fajita wraps with salad and sides.
- Easy meal ie egg or beans on toast, freezer pizza for him.
- HM lasagne from the freezer, salad and garlic bread.
- Mushroom risotto, salad
- Brisket slow-cooker "all in" pot roast.
It's lovely to see so many meal ideas and new things to try in this thread. We really need to reduce our meat consumption and be more creative with what we have in stock/freezer.
We don't tend to eat breakfast, sometimes have a late brunch or late lunch depending on work schedules - this is often HM soup or sandwiches or leftovers. I'm into crackers with cheese and tomatoes at the moment.

2. Veggie meatball subs (using YS subs) with chips
3. Out
4. Spinach and artichoke pasta
5. Away for the evening
6. Veggie mince and refried bean burritos

Nut burgers swapped to Friday as we forgot to get them out of the freezer, instead we used up 2 beetroots in beetroot and Brie risotto. Red Thai curry tomorrow instead of Friday which means the ready meal will be for another day.Saturday we have family over so will cook for them and I have potatoes and broccoli to use up at least. Broccoli always either goes into a roast dinner or pesto tagliatelle in our house so would like other options. I had the fish and chips on Tuesday instead of Wednesday.
I'm not sleeping at the moment and it's affecting my appetite, so the planned Ethiopian Stew that I'd defrosted, is still sat untouched in the fridge.
Tonight is meant to be Doubara Baskra, but will end up being tomorrow's pizza or meatballs and spaghetti with pesto. As DD2 and GD are both staying. (DD1 is having some middle of the week, half term respite).
Not sure about the weekend! I will report back.

- See what looks good at the fishmongers
- Pork ribs, corn, green beans, mushrooms and baked spuds
- Roast chicken, salad, homemade coleslaw, baby potatoes
- Pork steaks, salad, sweet potato wedges
- Pasta with pesto, chorizo, chicken and baby plum tomatoes
- Sausages, oven chips, beans and mushrooms
- tbc - possibly out or something from the freezer
