I've made it only once since - vegan pancakes, vegan butter, cointreau, fresh oranges - it was absolutely lush and in all honesty it tasted pretty much the same as I remembered! 😍 now that you've reminded me, I'll be putting it on my winter solstice menu - obviously I'll need a trial run before that though! 🤔😂DNF: £708.92/£1000

@leftatthetrafficlights I’d love to have recipes for most of these dishes but would you please share your recipe for the cashew and cranberry roast? I eat meat but would love a few options for a meat free lunch for a Sunday.Follow here for the daily life of an ADHD mum with 2 children and a new mortgage to pay

Having to swop the soup and rolls for another day, as I bought broccoli when it wasn't really being incorporated into any meals on the plan. So I'm going to have a strifry, as I also have leftover stir fry sauce I made from a previous time; and i'll use up cauli aswell and throw in some mushrooms, peppers and carrot maybe! (that was Sat night)
The rest may be subject to change, as GD may be staying at some point during the week.

However, I found this on the cheap family recipe site:Ingredients
- 2 tbsps oil for frying,
- 320 g onions chopped
- 2 tsps garlic powder
- 100 g oats
- 85 g dried cranberries soaked in 60 ml hot water in a mug
- 280 ml stock made with a 'chicken' or vegetable stock cube
- 180 g cashew nuts chopped
- splash wine vinegar or balsamic vinegar
- Salt and pepper to taste
Instructions
- Toast the cashew pieces lightly in a frying pan without any oil, for 1-2 minutes until the nuts begin to brown gently. Tip them out and put to one side.
- Fry the onion in the oil for about five minutes or until soft. Add the garlic. Cook for a few more minutes.
- Simmer slowly for two or three minutes.
- Stir in the nuts, cranberries, vinegar and seasoning.
- Sprinkle the oats on top. Stir well.
- Add the stock and cranberry water, stirring all the time.
- Spoon the mix into a greased or lined 2lb loaf tin. Bake for 25 mins at Gas Mark 5.
