I'm all over the place with meal planning this week as life has gone a bit haywire,
My week runs from Friday to Thursday, so for the rest of this week we'll be having:
Monday: Steamed tenderstem broccoli and chicken breast chunks stir fried with garlic and black pepper, served with veg couscous. This was a repeat of last night, as I cooked more than we needed!
Tuesday: Spaghetti in a garlicky mushroom cream sauce
Wednesday : Oven baked coconut-crusted cod with sag aloo
Thursday : Pork and red pepper meatballs on parsnip mash with a tomato/onion/garlic/oregano/cayenne sauce
Puddings will be rhubarb (from the garden) crumble, arctic roll, and fresh fruit salad.9 -
Last week went a bit pear-shaped at the end of the week - having the grandbaby here meant less cooking and more playing! 😍
The plan for the week ahead is:
Mon- Cabbage, rice & red beans
Tues- lentil pastchio made with hollandaise and smoked cheese, steamed cauli, braised cabbage
Wed- fish fingers/sausages with bubble and squeak
Thurs- artichoke and chickpea casserole with butternut squash slices
Fri - enchilada pie
Sat - miso fridge soup
Not sure whether we'll stick to it in it's entirety as we may be off out one night this week but that's the plan! 😂DNF: £708.92/£1000

@candygirl - definitely email Morrisons. They are very good about refunding although I'm not sure how it works with deliveries as when I contacted them about a mouldy pepper they refunded the cost to my More card and said it would come off next time I scanned it. Don't know if it will work as not been since I contacted them last week - will find out next time I need to shop in there!

Here is my meal plan for the remaining 7 days of May. Breakfasts remain porridge/toast, and lunches are butties or leftovers/school meals. (F) means it's out of the freezer.
Tu: Bob Chorba soup and pudding
W: Smoked Tofu Buddha Bowl - feat. smoked tofu, brown rice, shredded lettuce, tomato salad + one other veg
Th: Puy Lentil stew (F) and rice
F: Black olive pizza and wedges
Sa: Lentil Bolognese (F), baked potato (for the adults)/pasta + a green veg
Su: Fish, Chips & mushy peas
M: "Curry plate" = leftover curry from freezer, lentil dhal & rice
Tu: Omlette buddha bowl

Turlu (Cypriot stew) and my take on Gousto's Sesame Baked Tofu and crispy Kale with peanut Spicy sauce.
Used own ingredients and just followed the recipe instructions. Ours started on Monday. I'm a bit late posting as we hadn't finalised the plan until today when we went shopping.
1. I was out, OH had a takeaway
2. Teriyaki noodles with beansprouts (YS). I had mine with Quorn steak strips, OH had salmon (YS) and mushrooms (YS)
3. Thai red curry with broccoli, carrots, green beans, baby corn (all veg YS), Quorn chicken and rice
4. Quorn nuggets, mash (YS) and beans
5. Tagliatelle with olives, tomatoes and feta
6. Burgers (beef for OH, Quorn chicken for me) with sweet potato fries
7. Undecided - will see what is left!7 -
Saved the Turlu recipe @K9sandFelines, looks good, I get put off with Cypriot recipes that use vast amounts of cinnamon,
Had the baked cod with chorizo yesterday, side was courgettes, butter beans, olives bake type thing, no half size tins of butter beans, so subbed chickpeas, will not be making again, cod was lovely but simply basic ratatouille would have been better.Do I need it or just want it.5 -
Keeping it simple next week as probably getting kitchen plumbing work done
- Takeaway or freezer rake
- Chicken Kyiv, spuds of some description, corn cobette and salad
- Sous vide cooked brisket (from the freezer, new potatoes, broccoli, asparagus and gravy or peppercorn sauce
- Lentil and black bean chilli (from the freezer), baked potatoes, mashed avocado and salad
- Chicken chasni, rice and Naan
- Curried sausages (using LO curry sauce), frozen veg and oven chips
- Chicken and rice traybake recipe - BBC Food

My menu plan week starts from tomorrow, so I nipped out at lunchtime today to do the weekly Aldi shop clutching my carefully written shopping list. However on the way I called in briefly to the local Community Fridge and stocked up with a big bag full of lovely fresh free fruit, veg and herbs/spices so I had to quickly re-think the meal plan accordingly. So we will be having:
Friday : Chilli and rice
Saturday : Oven roasted portobello mushrooms stuffed with rice, cheese, spinach, shallot
Sunday : Slow cooker leg of lamb Kleftiko with various green veg
Monday : Lamb shawarma wraps, using leftover lamb
Tuesday: Lamb biriyani, using leftover lamb
Wednesday : Finish lamb biriyani
Thursday : Hoisin chicken and egg fried rice
Puds this week are bread and butter pudding, banana custard, and crepes suzette - using eggs from my hens, long life milk which is nearing its use by date, and items from the Community Fridge. It's turned out to be a wonderfully frugal week, grocery-wise9
