So I moved the Louisiana Linguine forward for another time; the rest of the meal plan was rejigged a little, and I'm now on Friday with the Tamarind Aubergine curry. I would not make this again. It was only saved by adding coconut cream and curry powder and a blob of mango chutney (oh and I added mushrooms). I was really hungry though, as I hadn't eaten since breakfast; so I'm off to decide whether to freeze the rest, or go in for seconds. I do have umpteen different style of curries in the freezer already.leftatthetrafficlights said:K9sandFelines said:
Meal plan in bold has changed. Has everyone else stuck to theirs?K9sandFelines said:Just thought this would be quicker reference than what's for dinner or searching through lots of posts?
There used to be one a while back, Meal Plan Monday or obviously whatever day you start yours on 🙂
I did post mine in the Grocery challenge, but will post again for anybody that doesn't join in with that thread.
 Vegan
Everything's changed around from originally posting
 Sunday 1st: Grill up
Monday 2nd: Hoisin pork and rice
Tuesday 3rd: Fishless fillet, chips and peas
Wednesday 4th: Meat free hotdog and hm soup and rolls
Thursday 5th : Hawaaian style fried tofu and coconut rice
Friday 6th : was Hoppin John but ended up being Cajun tofu with cashew cheese pasta and broccoli
Today: Savoury lentils, cauli, red cabbage and mash
Sunday 8th : Burger, chips and corn
Monday 9th: Freezer meal (doubara baskra, African stew, curry and rice or Goulash)
Tuesday 10th: Jacket potato with coronation or pulled (bbq) jackfruit
Wednesday 11th: Spicy dhal (from freezer) and naan
 Thursday 12th: Dan Dan noodles

Also almost on a new week, wow that flew by!
 Instead the meal plan went:
Monday 9th: leftover savoury lentils, cauli and new potatoes
Tuesday 10th: Moroccan aubergine (29p ones from A1di) with pasta (olives, toms, capers) and some houmous.
Today (the 11th) actually going to make the Hopin John in a mo
Tomorrow (the 12th) : Jacket potato with coronation or bbq jackfruit)
New month starts on the 13th and I have done a meal plan but its subject to change, as may have both DDs and GD here, just depends on what their plans are.
So, it should be as follows (stc) :
Friday 13th : Dan Dan noodles for me and DD2. Hotdog, noodles and peas for DD1 and GD (they don't do spicy foods and GD is suspected ASD and has this meal every Friday ☺️
Saturday 14th: Bolognese pasta with garlic bread.
Sunday 15th :Grill up for dinner/early tea. Dhal (from freezer) and naan for me later if still hungry, as everyone will have gone home by then
Monday 16th : Freezer meal incl dhal if not eaten last night
Tues 17th:Baked Sesame Tofu (if I have any by then), Peanut Sauce and crispy kale (dependant on if still ok)
 Wed 18th: Tamarind Aubergine curry
Thurs 19th: Louisana Linguine (although I may use tagliatelle)
I will be back with a new meal plan in a day or so. DD2 is here and so it could change the minute I post it, so I'll know more when she is here at least😊👍.

Hi All, meal plan mostly been stuck to, yesterday I didn’t feel to good so we just had oven chips and chicken nuggets and salad wrap instead of SPaG Bol. Stuck to plan today of bean stew, tomorrow is changing from cream cheese pasta as I couldn’t get any cheese with my shopping delivery on Wednesday. Will be having curries from the freezer instead. And Sunday will stay the same, so havent done to badly this week :-)5

I’ve been away so have come back to just a few carrots and a Savoy cabbage. Aiming to avoid shopping until midweek so it’s store cupboard/freezer ingredients for most of the week.
Soup from the freezer will do several days.
spag bol (bolognese sauce from freezer)
lamb stew with carrots and cabbage
 bbq pork with coleslaw
lentil and coconut curry (coconut milk and coconut chunks from freezer) with rice
rinse and repeat (as a singleton I tend to make two portions)
i do have some emergency cans of fruit for desserts but I suspect I’ll worry about my 5 a day and do a mini fresh fruit shop before my planned mid week trip to the big Lidl.5

Not hugely stuck to here as we’re having take away tonight, I still however cooked the meatballs (which ended up being spagbol) for my daughter and I’ll freeze the remaining 5 portions. The curry plate was swapped for a buddah bowl but still used chicken as intended and the chicken and chorizo bake will indeed be parked for another time. Not hugely successful and now absolutely no tinned tomatoes in the cupboards so I can’t be planning anything with those! Our goes mince and most of the easier curries we would usually have!Be back to meal plan for next week pending how this weekend goes 🤰Follow here for the daily life of an ADHD mum with 2 children and a new mortgage to pay

Our main meal plan for the week, from today:
Friday: Smoked haddock in a white wine, cream, leek & paprika sauce, with new potatoes, asparagus & mediterranean fried tomatoes.
Saturday: Chilli con carne/sin carne with brown rice, peas & sweetcorn.
Sunday: Roast chicken/vegetables with roast potatoes, broccoli, leek & carrots - pudding will be raspberry clafoutis, with last year's rasps from the freezer.
Monday: Pasta carbonara/creamy mushroom sauce with green beans. (Ham L/O from Wednesday's slow-cooked gammon)
Tuesday: Chicken/vegetable curry with basmati rice, HM naans & veg from the freezer
Wednesday: EITHER HM pizzas OR stir-fry, depending on whether there's enough chicken/mushrooms still left over & interesting leaves, stalks & spring onions from the allotment.
Thursday: Baked potatoes with whatever's left over!
There will be chicken noodle soup made from the carcasses (two small chickens worked out cheaper than one large one) for lunches when salad doesn't feel right! And breakfasts will be the usual assortment of eggs, HM cinnamon buns, pancakes, yogurt, fruit or and/or toast.Angie - GC Oct 25: £467.21/£500: 2025 Fashion on the Ration Challenge: 40/68: (Money's just a substitute for time & talent...)5

@thriftwizard. I have smoked haddock on the freezer - but have been disappointed with the result. That’s down to me as it’s properly smoked quality fish. How do you do yours?
and I just realised - I have blackberries in the freezer so a blackberry clafoutis is a possibility.3

 w egg and chips
t sausage and mash made from squash and butternut
f beef + fennel stir fry with mooli raddish noodles
s salad lettuce rocket cucumber chard tomatoes cheese or egg
 s roast
 Repeat again next week
i have avoided soups again as still have 3 servings left in freezer But may squeeze one in As so easy to do and have on hand. I had one today from fridge been there 10 days and still lush with a bit of melted cheese. and very filling.
I am quite repetitive i know but have a large veg odd box once a fortnight and just me to get through it all Could go smaller but like the different varieties of veg you get with the large box
Feel free to make improvements or suggestions
I am getting Potatoes, Onions, Tomatoes, Mooli Radish, Cucumber*, Lettuce*, Rocket*, Chard, Squash.
I try to avoid sugar and pasta and bread
i will do beef stir frys with pak choi courgettes mushrooms peppers
I will do salads with salad new potato beetroot
I will do omelette with asparagus
I will use butternut as mash for week (after zapping in microwave)
I will use cauliflower for sunday roast
i am so pleased with the amount and quality and variety and get ridiculously excited Its like Christmas21k savings no debt4
