    You've had quite a day @Coxy11. Glad it's over. 😊

    Had a huge dinner. So little left that decided to have a third helping as not worth keeping any LOs. All on plan though. 😉

    Is that the Mayflower curry @bubbs? I prefer a tomato based sauce like Indian. On the menu for the weekend although haven't done my meal plan yet. 🤔

    Creamy Mauritian Chicken Curry

    3 garlic cloves, crushed

    5cm piece fresh root ginger, peeled and finely grated

    12 spring onions, chopped

    2 tbsp medium curry powder

    1 tsp ground ginger

    227g can chopped tomatoes

    200ml boiling chicken stock

    8 skinless and boneless chicken thighs, cut into bite-size pieces

    1 large butternut squash peeled, deseeded and cut into small chunks

    200g FF natural fromage frais

    Place a large non-stick saucepan over a medium-low heat and add the garlic, fresh ginger, nearly all of the spring onions and 2 tbsp water. Cover and cook gently for 5 minutes or until the spring onions are soft.

    Add the curry powder and ground ginger and cook for 1 minute, then stir in the chopped tomatoes, stock, chicken and squash. Simmer uncovered for 30 minutes, stirring regularly, until the sauce has reduced and thickened nicely and the chicken and squash are cooked and tender.

    Take the curry off the heat and leave to cool slightly. Stir in half of the fromage frais and season to taste. Drizzle over the remaining fromage frais and remaining spring onions. Serve with rice.

    …and good morning everyone.

    Didn’t manage to get on last night as after my dinner I was pooped. DH did a lovely chilli con carne which was ready as I walked through the door from the station. There are some benefits for being in the office all day :D

    Long day yesterday. Bumped into one of the ladies from the IV panel first thing who took me aside to say I didn’t get the job. I didn’t sell myself enough apparently, which is probably true. Meeting with boss was a bit bottom-clenching, but it’s out there now. She is going to see if there’s any (interesting) projects or training I could be doing to enable a side-ways move, and I will attend some internal meetings to get exposure to work we have going on. I will continue to look externally, but want to be seen to be willing.

    Food today:

    B – poached egg, WM toast (1), tomatoes, mushrooms – HEB, S

    L – crabstick and tuna salad, tomatoes, LTL mayo – P, S, 0.5

    D – salmon, jacket potato, green beans, carrots – P, 1, S

    HEA – milk

    HEA – babybel light

    Syns – 1.5

    I’m going to a neighbours’ house tonight for a party plan event. It’s a pamper evening with beauty products to test/buy. There will probably be wine but I’m thinking of taking some fizzy flavoured water as it’s WI tomorrow morning.

    Morning all.

    Not been on for a while and haven't been able to catch up on posts unfortunately.

    Went to WI last night and lost 0.5lb. Only 1lb to go to get my 1.5st award.   Am trying to lose as much as I can before my holiday on 19th May. I will miss 2 WI's but I come back on a weekend, so will have a few days before my next WI on the Thursday.

    I sit with 2 other girls in group and they are lovely.  We were having a bit of giggle to be honest - when the consultant is talking away, you can tell that everyone is not really interested in what she's saying, as she's so uninspiring  :(  The consultant is arranging a meal out for everyone to celebrate 12 months being back in group after the pandemic.  The day she's arranging though is the 20th May and I will be away and my 2 friends are celebrating their birthdays, so won't be going either. 

    The consultant also mentioned about the fact that if you can't weigh in at this group, you can weigh in at any other group bla bla. She did give a printed out sheet that she'd done herself with all the other local groups listed.  We did spot a deliberate mistake though, another consultant "L" who does 2 groups on a Saturday morning and one on a Thursday morning, that group was missing.  I found out from my friend that our consultant and "L" don't get on, which is why it was missing.  It's a shame someone didn't pipe up and ask her why it was missing lol!  I know all the groups are listed on the website and app, but it was a bit petty I thought. 

    Have a mini cooked breakfast this morning, 2 x bacon medallions, mushrooms, eggs, 2 x wholemeal bread (HexB) and tinned chopped tomatoes.

    Well done on the shock loss Denise, I would be chuffed at that! Also well done to the other achievers.

    Only lost 1/2lb this week, but it was a loss and I probably didn't eat enough either as I was so busy, yesterday only managed a banana before going to WI, one of those days where I didn't have time to change my mind!

    Got to do the best I can this evening, eating at a Brasserie near Leicester Sq, menu not that great, made worse by the fact that I don't like fish & can't eat pork, so pretty limited menu, but hey ho, it is the beginning of the week so should be able to sort it out.
    A smile costs little but creates much :)

    Morning all, well done to all the losers :smiley: Sorry about the job @Coxy11 but it means there's something far better waiting for you.  

    The fridge is looking very bare this morning and I've no yoghurt, fruit or salad stuff left.  I'm not hungry just now so thinking breakfast could become brunch and I'll have an omelette with bacon medallions, tomatoes, mushrooms and beans.  Dinner is chicken stir fry with noodles.    I'll syn a McGhee's tattie scone at 3 and 1 syn for sweet chilli sauce.
