A friend makes chia seed strawberry jam. I've never made it so not sent a link to any recipes but it has always sounded super easy - no boiling and setting and all that faff.  Doesn't keep for ages (only a week or so) but it might be worth a try?
Made it to mortgage free but what a muddle that became

In the event the proverbial hits the fan then co-habitees are better stashing their cash than being mortgage free !!

That sounds interesting .... the protein and the fibre in the seeds will offset the sugar hit of the jam. I will have a look, thank you :)

Hi KajiKita. You probably know this, but you can freeze strawberries for later use. Just rinse, pat dry, hull and freeze in tubs. No good for eating raw after freezing, but great for jam, compote, frozen yoghurt etc at a later date.

Funnily enough I bought a 'new to me' Vegan cookbook for 20p today and on flicking through saw it has a recipe for Chia Jam :)

Just joining in on the jam suggestions - a friend of mine used to make 'freezer jam', never made it myself but she rated it - no cooking.  There's a recipe on BBCFood here, but I've not tried it.
