Very tasty lunch today. From the BSD book and not the type of thing I would normally make:
1 ready cooked beetroot
2 small figs
roast in oven with a drizzle of balsamic vinegar.
put a few cubes of feta on top and put back in oven for 5 mins.
B - yoghurt and forest fruit
L - as above
T - chestnut and mushroom hot pot (another recipe that will be new to me)8 -
@Need2bthrifty your lunch sounds amazing! I might try it with the kids one day! They do like a homemade pizza. Pancakes, sandwich and cottage pie and veg for me today (and a couple of biscuits) I’ve also got the exercise bike out. I’ve not done any exercise, apart from a little walking, in a very long so I’m easing myself in gently! I figure that every little helps!xx7

I cant take credit for that pizza-type lunch idea. I picked up the tip of using crusty bread or part-baked rolls a few years ago from well experienced, established, waste not want not, MSE’rs - its up to you what you use - tomato puree/pesto/passata for a base, I like to add some fresh tomato but have also put on ham or salami then a bit of whatever cheese I have to hand then bingo you have an easy finger food lunch.

Tea - seafood with roast courgette
I’m also cooking loads of portions of lamb hotpot and bolognese sauce for the freezer. All BSD recipes.9 -

L : smoked salmon and cucumber sandwich, grapes (a small handful which had detached themselves from the bunch in today’s delivery), raspberries & cream - I do like a day with three desserts!

Much nicer day here and there’s been a bit of a thaw, I always feel better when the sun shines and even managed to fit in a brisk 2.5mls this morning. Todays menu =
B - Porridge with tinned peaches
L - Prawn salad with crispbread x 2
D - Leek & stilton quiche, roast tomatoes & green beans
I so enjoyed my lunch, I’ve been eating stodge and comfort food for as long the prawns were a lovely change. Right off to make up some pastry, hope everyone’s staying safe.
