Well it’s being ages since I commented on this one! I did my weekly meal prep this week using reduced sticker lamb I got at Aldi and a load of scruffy veg from the fridge and made 4 x lamb stew. Had it tonight and it was delicious. I also made some Keto Yorkshire puddings to dunk. Each meal cost maybe £2 which for lamb and Keto isn’t too bad at all.I also made a stack of chaffles to use as bread slices for lunchtime deli sandwiches, again these are fairly inexpensive as it’s egg, cheese and a tablespoon of coconut flour so maybe 25p a slice.I had to go through and deep clean my pantry today as a few weeks ago the cat brought in and released a mouse. We thought it had managed to escape but nope, it’s been having a lovely time in the cupboard eating my almond flour and the OH rice 😩. It gave me a good chance to have a stock take and see what we have, I actually have a lot less than I thought, loads of condiments and curry powders but not a whole lot of food. We are on a low spend pantry clearout this month so it’s gonna give me the chance to get creative.Hope everyone is doing great on their journeys and making lots of great frugal meals!Goal to Clear Debts £4592 Total Progress since 03/10/2020 £2802

Another week another meal prep!I had a half jar of Vindaloo paste so I used a quarter of that and made 4 dinners for the week. With everything the cost was around £1.70 a portionAlso garlic bread chaffles, boiled eggs and jelly post from sachets. All in all under £9 I think so pretty happy!Goal to Clear Debts £4592 Total Progress since 03/10/2020 £2802

I do low carb. Dr Eric Westman says that to do keto properly, you need to include the fibre ie in UK add fibre to carbs to get total carbs. In USA go by total carbs. He says 5g per day. The problem with low carb threads on MSE is that you get people eating chips or a tonne of cakes made with weird flours and sweeteners and claiming to be low carb.

Groceries got cancelled as the poor driver couldn't
get through the snow so I had to wing it using what I had and came up with tarragon chicken and some breakfast bites. I would guess the whole lot would be under £10 for a week of breakfast and 3 dinners so no complaints!

Looks lovely! I batch cook too and find it really helps me keep to keto when I am working in the week. I am curious what the other thing is in the container...looks like ribs? Also interested to know if the waffley things are keto too and if so where did you get them? Always on the look out for new treats.4

Always on the look out for new treats.The waffles are home made chaffles- a savoury waffle in a waffle maker that is firm that I use instead of bread. They are about a carb each and I used these tonight as burger buns! If you Google / YouTube Chaffle recipes you’ll get thousands. Eggs, cheese for a basic one but I add coconut flour and baking powder to make them firmer and puff up. You can also add erythritol and vanilla etc to make sweet ones. I batch cook and freeze mine and just pop them in the toaster straight from the freezer. Might have toasted cheese and pepperoni chaffle sandwiches for lunch next week. You’ll need a waffle maker too, a mini one or a square Belgian style one. Hope that helps!Goal to Clear Debts £4592 Total Progress since 03/10/2020 £2802

New to this thread, sorry I have scanned most of the comments, but not read in detail, I have been low carb for several years, got down to my preferred weight, then in lockdown it crept slowly back, not got back to my heaviest, but close.
I like to cook from scratch and being retired can everyday, I do sometimes cook to much, especially when most recipes are for 4/6/8 and I am mentally dividing a recipe, then realise I have added the full amount of something,
think @juicyjackieb has great ideas regarding batch cooking, I tend to follow 18.6, not interested or looking for food before noon, will prepare and eat my main meal, then about 5 p.m. a snack, I make low carb bread, so maybe something on a slice of toast maybe, eggs or pate mostly.
I try to meal plan, Today I am having colcannon with a bacon chop.Do I need it or just want it.4 -
I am trying to cut back on carbs and get very confused by all the information out there.Is colcannon low carb ? I thought it was made with mashed potato?I like the sound of the chaffles I might have to see if I can get a cheap mini waffle maker! There are lots of work arounds, a good site on facebook is keto fitness club-public . free library has some great recipes, diet doctor is also very good, I have a waffle maker but if I want something quick, greek yoghurt and a squirt of skinny syrup.
I am LOW carb not zero, so anything under 50 per day is good for me.Do I need it or just want it.5
