summer's here....any salad recipes?

    Hi everyone,

    With all this lovely weather we're having I'm in the mood for salad :D - can anyone give me any links to any 'salady type' recipes, was thinking of things such as potato salad and HM coleslaw - although any other things along these lines will be welcome.

    pepper salsa
    1 red pepper
    1 green pepper
    1 red chilli
    1 red or white onion
    4 tomatoes
    1 teaspoon sugar
    1 teaspoon lime juice
    2 teaspoons tomato puree
    2 tablespoons olive oil

    chop onion tomatoes red and green peppers remove seeds place in food processor add tomato puree chopped chili sugar and lime juice and pulse for a minute or till slightly chunky add olive oil and pulse again to mix well you can leave it chunky or have it slightly rough or smooth it's up to you. taste then add more lime or olive oil add salt and pepper then turn into a dish and place in fridge till needed, the colder this salad is the better serve with doritos or similiar.

    Hi Cat

    I make a dead easy tasty homemade coleslaw, cut up white cabbage onions and add grated carrot, mix with extra low fat mayo and your done, I also enjoy salads in the summer so to keep them from getting boring I try to add as much as possible:

    beetroot, spring onions, sweetcorn, chopped peppers, chives, boiled egg, roasted veggies, tuna and cooked meats all go nice with salad

    Makes 4 Servings

    2 Red Delicious Apples (Cored and diced leaving skin on)
    3 Sticks celery (chopped)
    50g Green Grapes (chopped in half)
    Handful of raisins
    Large handful walnuts
    Juice 1 lemon
    3 dessertspoons low fat mayonnaise
    1 dessertspoon low fat garlic and herb dressing
    2 Dessertspoons freshly chopped chives
    Salt & Pepper

    Method

    Put the chopped celery and apple in a bowl and add the lemon juice, stirring to ensure all the apple is coated in the lemon juice.
    Add the grapes, raisins and walnuts and stir.

    Next add the mayonnaise and the garlic and herb dressing and stir through so everything gets evenly covered with the dressing. Season with salt and pepper and add the chives stirring through again, place in the fridge until ready to serve.

    We have this with pork chops and baked potatoes with a leafy salad or with cold roast chicken to make a filling tasty ‘one bowl’ lunch.

    Ooh good. I was thinking of posting a very similar thread a few days ago but didn't get round to it! Does anyone have any idea how to make the nice lentil salads and chickpea salads you can buy for exorbitant sums in the supermarket, and is the couscous one literally just cold couscous and cold roasted veggies with a little salad dressing?

    Simple way of jazzing up a potato salad - a sprinkle of paprika. Looks good and the richest natural source of vitamin C.

    As far as I know there is no specific Old Style salad. However we do have a thread with lots of salad recipes that should help you, so I've merged your thread with it to keep all the replies together.
