    I make a layered salad in a lunchbox for OH to take to work that he loves, if anyone is interested in packed lunch salads!

    Bottom layer: grated carrot, then:
    chopped iceberg lettuce
    some cherry tomatoes, halved
    sprinkle of crisp sweetcorn
    thin slices of strong cheddar and parmesan,
    chopped apple
    pine nuts
    some more iceberg,
    repeat sweetcorn and cherry tomatoes, cheese, pine nuts and apple
    add avocado slices
    top with good quality coleslaw and mayonnaise

    Cubed cooked beetroot, thinly sliced shallots and grated carrot with a balsamic vinegar dreassing is also v tasty - and would be a lovely colourful dish to serve.
    And shockingly healthy too!!

    Do you cut & cube it yourself?

    Or do you know where I can buy it cubed;)

    Or am I on the wrong board for ready made:o
  • Am shocked!! Cheapo long-life stuff (Asda usually) then cube it yourself, of course!!!! Though should really grow it and boil it first for true OS!

    I was worried about the staining, thats why I don't DIY:o

    So I just buy normal & cube, now why didn't I think of that:o :o:o

    Before I go................

    I have NEVER bought them (;) ) but you know those nice pick your own salad bars in the supermarkets, they have them cubed, so someone somewhere sells it cubed.
    It tastes nicer cubed:D
  • Simple but yummy and makes a change from the usual rice salads

    Cooked rice pref brown
    1 small raw onion finely chopped
    Small tin mandarin segments roughly chopped
    Small pack dry roasted peanuts
    Salad cream

    Bung it all in a bowl and give it a mix. Yummy!

    Def like the potato salad with egg suggestion - wanted to say thanks, but couldn't see a thanks button anywhere... so thank you.

  • It does taste nicer cubed - but even nicer if you have done it yourself and probably saved about 98p every time!!

    I've never bought them either....thats not where I got the idea, honest!

  • I like curried chicken and rice rice salad - just boil some (about 4oz)rice and allow to cool and add chopped cooked chicken, spring onions, a chopped apple, some raisins or sultanas and mix it all with dressing made from 4tbs mayo (I use hellmanns extra light but any will do), 4tbs light salad cream, 1tbs mango chutney, 1tsp lemon or lime juice and curry powder to taste and salt and pepper. It's really nice served on lots of shredded lettuce.

    Layered Salad

    Spinach leaves
    spring onions
    cooked sweetcorn
    crispy bacon
    grated carrot
    blobs of mayonnaise (Helmann's ;) )
    avocado
    grated cheese
    cooked peas
    toasted sunflower seeds

    The layers don't have to be in that order. It's a maind dish with a baked spud or bread.

    Any old salad so long as it's got rocket and baby spinach leaves and vast quantities of olives, capers, gerkins, artichoke hearts, sunblush tommies and thinly sliced manchego cheese with a drizzle of pesto over the lot....yum! :j

    greek salad.;. made with watercress, cucumber, cherry toms, radish, peppers, feta cheese and balsamic vinigar - no olives i hate them if i am having visitors i put olives seperate from serving dish of salad so as people can help themselves!
