summer's here....any salad recipes?

    Sweat onion in oil
    add 1 measure basmati rice
    scant 2 measures water
    stock cube(s)
    curry powder or paste


    cook/ microwave until cooked & liquid absorbed

    dress with a good vinaigrette whilst still hot

    cool

    add chopped green apples
    v. finely slivered fresh ginger
    sultanas
    freshly toasted (grilled) redskin peanuts

    fresh coriander (optional)

    check seasoning

    GORGEOUS & MOREISH
  • Rocket, sliced over-ripe tomatoes, plenty of balsamic and olive oil and then some curls of parmesan over the top. Black pepper until your hand aches from grinding :D

    Its simple but my home made coleslaw is always popular, thank god for my mandolin! White cabbage and carrots, with yummy (and bad!) home made mayo. I don't put onion in it though, much nicer without :)

    I like a warm chicken liver salad.

    Clean and separate the livers. Flash fry in a little olive oil. Once brown on the outside (should still be pink inside) take them out of the pan, and then deglaze the pan with some balsamic vinegar.

    Arrange some salad leaves on a plate - I like this with something slightly bitter, maybe a mix with watercress in it, or a spinach based mix. Add some slivers of carrot, red pepper, beetroot if you have them (the size you get in some pre-mixes). Chopped walnuts are nice. Then arrange the livers on top, and finally pour the 'dressing' from the pan onto the salad.

    I do something similar with chicken breasts cooked with some honey and chilli. Almonds rather than walnuts. Asparagus rather then the other veggies.

    Pear, walnut and stilton salad.
    I use iceburg lettuce and ceaser salad dressing. YUM

    In a salad bowl put a flat teaspoon of real Dijon mustard, put 2 tablespoons of red wine vinegar with shallots, 6 tablespoons of extra virgin olive oil. Whisk. Then put you fave leaves on top. I love Bavaria lettuce. When you are ready to serve mix the dressing and leaves together. Serve with your fave bread.

    Simple but lovely.

    Oh and I do another one, a Greek salad style couscous, but using passata to make the couscous instead of water or stock. Then add diced cucumber, finely chopped onion, diced feta, diced tomatoes, black olives cut into four pieces, fresh parsley, salt and pepper and a little vinaigrette. It was a big hit at my firm's last barbecue (Senior Partner provides all the meat and we volunteer to do accompaniments desserts and stuff)
    My Mum hates couscous thinks it tastes rubbish but she'll eat that. For myself I add a few drops of Tabasco too as I appear to be addicted to it! I think I might have a problem actually. My name is Sally and I am a Tabascaholic :-)

    Having a get together on Friday and we always end up making the same salads, pasta,mixed bean,cous cous sometimes,rice.

    Hoping to get a few ideas for a bit of inspiration!

    hi my quickest and best one is mixed leaves maybe spinach and rocket and some round lettuce baby tomatoes finely sliced fine green beans, spring onion, pine nuts and sunflower seeds scattered on top and drizzled with olive oil and a squirt of lemon juice

    A simpler version of the Mozarella and tomato salad above. For 2 or 3 servings, a "lump" of Mozarella cheese, a beef tomato, and an onion. A bunch of fresh basil and some olive oil. Cut the cheese, tomato and onion into slices and arrange 2 slices of each artistically on a plate. Chop up some basil and sprinkle it on top. Drizzle with a little olive oil. Serve with ciabatta or focaccia bread.

    PS. You can leave out the onion, if it would be "inappropriate", but it then probably only serves 2.
