What I do is read the ingredients on the pots of salad in the supermarket then reproduce them at home.Its cheaper and gives me some inspiration.
Boil up some fancy pasta shapes then add tomato dressing made with tomato puree,a dash of red wine vinegar and olive oil.Then finely chop a little cucumber,spring onion,cherry toms and add some sweet corn.If you like it spicy a dash of chilli sauce is nice.
Another good one is this bacon/chicken salad.
Grill a couple of rashers of bacon till crisp and crumble.Mix with mayo,pasta shapes and any small bits of veg.If you have any left over chicken bits chop finely and add.HTH"Sometimes life sucks....but the alternative is unacceptable."0 -

I make a sort of lebonese type salad - lettuce, tomatoes, cucumber, radish and grilled halloumi cheese with a salad dressing of fresh mint, olive oil (as little or as much as you like) and lemon juice, plus a bit of salt and pepper. Yummy! (works for me anyhoo

I love salads too, and make:
Rejuvenation salad--chopped apple and celery, grated carrots, and a few chopped walnuts, and soaked sultanas. Mix with lemon juice and mayonnaise, if wished.
Celeriac salad: grated raw celeriac with lemon juice and seasoning.
Beetroot salad, made from vacuum packed pre-cooked beetroot.

Another bacon one- I first ate this in a restaurant-
cooked bacon, cooked chicken cut into small chunks and avocado cut into the same size chunks, mix up with salad leaves and dress with an olive oil and lemon mixture with some herbs in if you fancyJust call me Nodwah the thread killer0 -

Mixed salad is good: peppers/lettuce/tomatoes/cucumber.
Colslaw: finely chopped lettuce, grated carrot, and a little onion, with low fat mayo, yoghurt, and seasoning.
Cucumber salad: cucumber, mint, yoghurt, and seasoning.
Carrot salad is also good with apple juice and raisins.
Tomato: chopped tomatoes, olive oil, lemon juice or a nice vinegar, and fresh basil, is delicious.
I often use balsamic vinegar instead of other dressings, but sweet n sour french dressing is also very nice.
I make loads more, but have gone blank.

I like the bacon ,chicken idea i might try that one tomorrow night.(i eat salads on my nightshifts couldn t stomach anything else at 3am lol)

Yes more veg salads etc,I love pasta but its very heavy at that time of night.

Hi Princess, I've no idea if the dressing's in there--someone taught me it years ago. It's just oil, lemon juice, (3:1, like usual french dressing)a bit of sugar--half to one teaspoon, and a good pinch of salt. Adding extra lemon/salt/sugar to taste. I make it in a jar and keep it in the fridge for a few days.
